    So, to get that dark color, melt the butter, then add flour and cook that till it darkens but not burns. Stir it constantly! It’s called a dark roux and it’s the heart of a good gumbo ^.^
    Keep on doing you! Don’t let some people’s negativity affect you!

      I can understand that but their is so many things that are off in this dish.
      No trinity
      Roux wasn’t made properly
      Chicken was not boiled for stock and normally it would be a Hen that would be deboned after cooking.
      Sausage would be smothered
      Then stock and chicken added back.
      Also the darkness of the roux would really depend on if you are trying for New Orleans Style which is more like a soup
      Or Lafayette style which is more like a stew in color.

      @@geronimo9193 He’s pretty much dead on.
      I don’t know exactly what he means by colored like a stew but gumbo is definitely a lot thicker in Lafayette than Nola.
      I don’t know many home cooks that use chicken stock either but it’s really nice when it is. Same with smothering the sausage. Not really done often at home anymore but I think it’s mostly because it’s rare to have enough time to do the extra steps (being making your stock and browning the sausage).

      You need file powder as well. Otherwise you just have sausage and shrimp/chicken stew. I wish I lived in Louisiana the food that has come outta there is fucking amazing.

    In one of the episodes her “light switch was stolen”. 0:06 that’s not a light switch on the wall it’s just a blank plate. We must protect this women at all costs

      It WAS a switch of some sort. Theres still some argument about what the switch did. But they put a blanking plate over the hole about a year ago

    Hi Kay! So helpful tip for making the roux, I melt the butter first and then sift the flour in gradually (to prevent lumps). Then you let it brown up a bit once blended to ensure the flour isn't raw. I hope this is helpful as roux is very tricky to make.

    I love you're trying to cook a gumbo, we here in Louisiana love when others try but we want you to have the right taste. please, please look up how to do it and watch vid on how to make it. Gumbo is soooo good and you'll love when it's done right.

      Sorry No. Real Gumbo is so different from this. We in Texas and Louisiana like it dark and spicey. It's to die for. Literally it might kill you. We put in sausage, crabs, shrimp, and chicken. Okra is the key to the right texture.

      @@KaysCooking not sure if they still tar and feather down there, but they might :) The Cajun folks I met were very protective of their food. They might not care for your interpretation of a gumbo ;)

    Proud of you Kay, your cooking is improving. One tip for your sauce, add your butter first and melt it then add in your flour a bit at a time making sure it's smooth before adding more. It makes it easier and it should get brown that way.

    Kay, The way you get the sauce you add the butter melt it and and then you add flour little bit at a time and once your don’t you have a nice french gravy!
