Lemon and Herb Chickpeas Recipe:

Purple Smoothie (serves 2)
2 bananas
0,5 cup frozen blueberries
0,3 cup frozen spinach
2 tbsp milled flax seed
1 heaped tbsp peanut butter
Enough oat milk to reach your preferred consistency
Method:
-Blitz until smooth.

Vegan Spaghetti Bolognese (Serves 2)
1 small onion
1 small carrot
1 small celery stick
1 tbsp olive oil
300 g vegan mince
1 heaped tbsp tomato purée
0,5 cup dry red wine
1,25 cup tomato passata
1,25 cup vegetable stock
1 bay leaf
Salt and black pepper, to taste
2 servings of spaghetti
Method:
- Finely chop the onion, carrot and celery.
- Sauté the vegetables in the olive oil until softened and the onion has gone translucent. Cover with a lid to let them sweat.
- Add the vegan mince and brown for a few minutes.
- Add the tomato purée and stir through the mince, letting it cook off for another minute.
- Pour in the wine and cook it off, the liquid should absorbed and/or evaporated before you move on to the next step.
- Pour in the passata and vegetable stock.
- Season with salt and black pepper and add the bay leaf.
- Mix well and then let the sauce simmer for at least 20 minutes, maybe up to 40 minutes. Simply allow the liquid to cook down until you reach a sauce that you would like to eat.
- Cook spaghetti according to package instructions in the meantime.
- Taste the sauce and adjust the seasoning.
- Combine the sauce with the pasta in the pan and if you find it looks a little dry use the pasta water to thin the sauce as you mix it through the pasta, little by little until you are satisfied with the combination.
- Enjoy!

As always, I enjoyed your video. You've inspired me again and so we are having those beans tonight for dinner along with veggies I must use up and some Yum Sauce. Thank you. Things are looking up in my little world. Spring flowers are beginning to emerge and I got my first vaccine. (Husband has had both because he's older.) We are hoping it will be considered safe enough this summer to see our grandchildren (ages 7 and 10) We've not seen them in over a year!

I LOVE your lemony herb chick peas, and make them regularly. They don't take long to cook in an Instant Pot. I have even had them for breakfast when I'm wanting something savoury. Delicious :)

I’m tardy to the party but I’m glad I’m watching this on our first warm sunny day! I’m so motivated to go enjoy a farmers market now. So excited the radishes are back! Lol. Always add the liquor after you’ve fried off the onions, garlic and spices! Adding liquid takes away all the flavour and the spices won’t have their proper flavour brought out. Fry everything off for 5 minutes at least, then add the liquid! You’d probably be able to use fewer ingredients too, because the flavour would be maximised even more when frying, maybe see if it works😁 xx

2:59 Beyond meat just has this beyond-y aftertaste. To me (vegan) and my non-vegan fam this is just so strange we pretty much never buy them :D They definitely need to get rid of it somehow ;P
Edit: as you've mentioned at the end - it is just a very characteristic taste and some of us are just not fond of it - and it is fine! There are luckily many alternatives we can use in such recipes :)

I love watching your videos, the style, the music, the food, your voice, ... Everything comes together so perfectly. Because of that, I assumed that I would love everything you put out. But I can not agree when you say “free from GMO’s and other toxins”. With this, you contribute to the anti-gmo fearmongering, which is not productive. I know that this brand probably makes you say these things, but I’m sure you can find other brands to cooperate with, that don’t make you say false statements. What do you think?
