Thanks for posting this video and taking the time to explain. Your cookies are super delicious!! I made the cakey version for my husband birthday and he loves them. I used the amounts in your recipe and split in 4 batches to make one w/chocolate chips, another w/m&ms, another w/peppermint bark, and the last w/chocolate & pecans. All of them works really good. I just found your channel and I'm so thrilled! Quick question: on the chewy cookie alterations, in the video you say 'add 1 extra egg yolk' but in the video text and description it says to add 2 extra yolks. Did you half the control recipe in your examples and therefore add 1 yolk? Or was it meant to be 1 additional yolk for the full batch? Thank you for such a great vid!
I used to use Ghirardelli chips, but then I discovered that our local chocolate shop uses Guittard brand chocolate. The Guittard chips are about the same price point, and are 10 times better! They have more flavor, the chips are bigger, and they contain more quality ingredients. And their vanilla chips blow Ghirardelli vanilla chips right out of the water. If they are available in your area, you definitely should try Guittard!
This was so informative! You did an awesome job in explaining how to get the texure you want. Science &Testing information was great! Who knew! I love the chewy, so now I want to make some. You made me hungry. I loved how you had you baby there with you. Great video!
Thanks for taking the time to do this baking and sharing your results with us. Creaming vs. melted butter is more complicated than your results would indicate, however. First of all, the water from the melted butter will combine with the flour during agitation to produce gluten - which produces a chewier, denser cookie. And if you use bread flour, containing a higher protein content than AP flour, (or a combination of AP and bread flour) - the cookie will be chewier, still. And, as bread flour absorbs more liquid than AP flour, more moisture remains in the cookie - also creating more chew. Creaming butter adds air - air creates a lighter, cakier cookie. My experience in achieving chewier cookies is: Bread, or bread & AP flour; melted butter (which I also brown to add flavor), additional egg yolk, and increased brown sugar over white sugar, as the molasses in brown sugar loves moisture, so it will absorb water from the air. Baked properly, you can achieve a chewy cookie with a thin, crisp surround.
Thank you s much for this. Now I see what I have doing wrong. I love soft and chewy but always kept getting cakey (even though I use baking soda). From now on, only brown sugar and four butter squares.

Hi, i started following you when I saw your video @ratio for making chocolate ganesh. It helped me lot to understand the ratio technically. Here i have 1 query in cookies, 1) i don't use egg, what will be the replacement for egg. 2) before baking the cookie shape was half sphere after baking it turned almost flat, which ingredient makes it to achieve flat shape, is it sugar or sugar plus butter? I remember in high school in the mid 80’s the cafeteria ladies would make homemade chocochip cookies everyday and I loved them not fully cooked still a little raw they were thin and flat . I always seek that flavor when I try different recipes haven’t found it yet and it’s been 35 years ..Btw absolutely adorable baby 😍

So thank you so so so sooo much! I just have one question, they said resting (and chilling) your dough will enchance the flavour, then would it make any difference if I use melted or softened butter in the beginning since it'll get chilled out anyway before baking? And should I pop in the dough right away to the oven after I take it out from the fridge or should I let them out for a couple minutes before? Would that make any differences? Please help this curious newbie home baker! Thanks a lot for sharing 💕

Another baker here on UA-cam said that to make crispy cookies, you should use cold butter (just like in making pastry puff) and more flour... meanwhile you said to use more flour for chewy cookie, and melt the butter for crispy cookie. Help! I'm so confused 😅😅
Would you please tell us which of your versions came the closest to tasting like Mrs Fields chocolate chip cookie. Thank you for your reply. All my attempts to recreate her cookie get kind of close but just “not there.” Some say she used a bit of bread flour for a bit of structure. Others say she used powdered oatmeal for that unique softness. Any opinion? Thank you for your help.
I always was told that it made a difference if it was raining when baking. It adds more moisture to what your baking. I know this by painting on a rainy day, my paint ran down the wall. Learn from my mistakes.
Thanks for the tests, i was wondering if i could use spread butter instead of butter in sticks, and if the light butter will work. I'm not a big fan of butter, it has too much fat. Thanks

Aaaaah the little one was the best part of the video by far 🥰 This made the video so much more "real-world" feeling than a sterile, perfect video. Plus...babies make everything better, because our hearts are lifted ❤ My biggest question is how I get a really uniformly "flat" and crispy cookie (only a few mm in height across the entire surface), kinda like the ones you see in the store sometimes, but cannot find any way to reproduce at home (probably some hideous chemical, knowing my luck and the mass-produced food industry)

I absolutely HATE cakey cookies but whenever I make a DIY cookie recipe they ALWAYS end up cakey it never fails.

Hmm, maybe a looser batter (extra melted butter perhaps) and warm ingredients? I'm no expert though

Can I use palm sugar? But my palm sugar texture is more like granulate sugar but it's palm sugar.
