- I didn't know there was such a thing called cassava cake till my aunt made it about 5 years ago, which she got from a Filipino friend of hers. I know this dish is common amongst the filipino community and there are a variety of similar dishes amongst the South Pacific islands. I know in Tonga we have the to'u kutu which is a cassava baked bread in the umu (so yummy). Cassava cake is also considered a Fijian dish. Anyways this recipe is simple, quick and easy to whip up for the family to enjoy with a cup of coffee. Hope you all enjoy! Malo
Ingredients
4 eggs (save 2 egg yolks for topping)
1 can evaporated milk
1 cup sugar
1/2 can condensed milk (use other half for topping)
2 bags of grated cassava (3 1/2 cups)
1 tsp vanilla extract
1 can coconut milk
Topping
2 egg yolk
1/2 can condensed milk
1/2 cup coconut milk

I haven't tried the powdered one but it should be fine but the texture might be different

Is this the cake that they use in fai kakai manioke
sort of, we leave the manoike to dry in the sun, then we grate it into a flour-like powder we call mahoa'a. Then we add the coconut milk and bake the mixture we call "mā" where it's then cut up and mixed in with the lolo to make faikakai.
