How to make ★Somen★Japanese summer cold noodles~そうめんの作り方~(EP58)

  • Today, I am going to be making Soumen.
    Somen is a very thin wheat flour noodle eaten on a hot summer day. Japanese summer is hot and high in humidity, so we tend to lose appetite. ( not including me. Lol)
    Somen is so refreshing and takes no time to cook. I like to serve with some condiments, but you don’t have to add anything if you want.
    <serves 4>
    5 bunch of somen noodles
    1 large egg
    A pinch of salt
    1/2 teaspoon of potato starch ※dissolves in 1 teaspoon of water
    1/2 Japanese cucumber
    ・3 slices ham
    ・Crab sticks
    ・2~3 stalks scallion
    ・Grated ginger
    ・Simmered shitake mushroom
    Mentsuyu to serve for individual small bowl
    If you don’t have Mentsuyu, here is the easy recipe.
    Combine 4 dashi, 1 mirin, 1 light soy sauce, and bring up to boil. Chill before serving.

    My mother in law taught me to scrub salt cucumber first and peel the top of it to remove the bitter taste ☺️

    In Mexico, we also remove bitterness of the cucumber by rubbing the ends too!

    It was a hot summer day here today in Japan. My girlfriend (Japanese) was at school until late, so I decided to try to make soumen for her!
    Kanji is still hard for me to read, so I took longer than I should have, but eventually I was able to buy all the ingredients.
    I diligently prepared all the ingredients, julienned the sides, and properly removed the starch from the noodles and such. I followed the same proceedure as the video!
    First thing she did when she arrived home was complain about the noodles not being in chilled water. Called me strange.
    Sorry for the random rant!

      Maybe she was just testing you to see if you can handle her Japanese culinary standards! Chilled water for soumen will dilute the tsuyu which we don’t want. She will understand why we do it. Thanks for your comment!

    I dont know why it works, but my mom also taught me it removes the bitterness.

    I love adding grated daikon (spicy bottom) to my somen with a little bit of grated ginger. I can eat this daily in the summer when it’s hot outside.

    I'm not a huge cold noodle fan but I may try this - I think I can get Soumen noodles at the local Korean store. And this looks so simple.
    Since I started watching your channel, I've had so many reasons to grate ginger that I ordered an extra grater from Amazon just for the purpose.
    I'm really looking forward to the Tempura next week!

      Hi, Jasper! Yes, you are right. In Korea, "Somen" called "Guksu" I think.
      Now you can make Somen in no time, because you have Mentsuyu.
      To have a good grater is a key to cook well! I have 3~4 types of grater for differnt purpose. Thanks for watching and see you in Tempura video. You will love it!

    Mmmmmm, makes me miss my Japanese friend who moved back to Japan. We'd eat this style of noodle and hang out before we'd go fishing. Thank you for the video, it looked so yummy and refreshing!

    Love this recipe! I will substitute the somen noodles with other types of noodles here (We don't have this here) and prepare a diff sauce. Will try with vegetarian ingredients too.

    We had something inspired by this (and of course zaru soba)for dinner tonight, I guess it was a hybrid meal to suit my husband's sensibilities -- dipping noodles into a tiny bowl is too fiddly for him. So I made cold soba noodles and poured the mentsuyu in the bottom of the wide bowl, placed cold noodles on top, and topped with nori, scallion and a bit of wasabi. On the side we had a lightly cooked stir-fry of broccoli, carrot and Quorn chicken-style pieces very simply prepared with just a bit of sesame oil and soy sauce. And for pickle, we had kimchi. :) It was cool and refreshing. I did use my Japanese dishes, of course! After eating it he said, 'I feel quite uplifted.' :D

      Sounds good! So, your dish is called "Bukkake Soba" or "Salad Soba" in Japanese. Rich in nutrients and refreshing! Lucky husband:-) Thanks for sharing your idea!
