  • Traditional Canning is an important skill to learn in food preservation, but what if the electricity goes out? What if you live in an urban area with no way to just throw together a campfire for canning? This method of using a Brake Bleeder is not sufficient to fully replace traditional canning for long-term pantry-shelf storage of all meats and vegetables, but it is a fantastic replacement for oxygen absorbers and offers the option of smaller quantity packaging of many bulk foods. Vacuum Seal anything that will benefit from being in a sealed, oxygen free environment, that fits in a jar. :)

    To prevent bug invasions, my mother and grandmother used to put a Bay leaf in each jar. They never had problems. If it's a gallon or half gallon, use two to three leaves.

    I have used a Food Saver for years. I keep dried beans, peas, and rice sealed in food saver bags (meal size). I use the jars for corn meal, flour, sugar, salt, pepper, spices. BUGS have to breathe. Can't breath in a vacuum. This break bleeder is a fantastic option. ALSO, vacuum seal PAINT in jars. It won't skim over and will last for YEARS. Love ya girl.

      re paint - don't store outside where it might freeze though, temps alter its composition, so store deep in the ground below the freeze line, if in cold country

    I've used this method several years exclusively for re-packaging all dehydrated and freeze dried foods. A tip: be sure to get a brake bleeder that has all metal pumping mechanism (the part you squeeze with your hand) because the plastic ones DO break! Second tip: when one hand starts to get tired, switch to the other hand.

      I got a an all metal one, but, the metal was cheap and weak and broke at the 6th jar. I was so disappointed. If you know of a brand that is made good and won't break can you please share it. Thank you.

    I never put the rings on after sealing, and I removing after canning. That way you know immediately if your seal fails. I also very seldom use ball or mason lids anymore. I have been using the Tattler Rigs and Lid system for the past ten years, and never had a failed seal. They are more expensive at first, but I am still using the same ones I bought 10 years ago.

    I have been doing this with dried foods for years and I find that used canning jar lids work better than the new ones when I use my food saver machine. Warming up the lids will make a better seal also. If you have trouble getting a good seal, try stacking 2 lids together when sealing. The top lid will come off and the bottom lid will be sealed.

      YES! And if you have problems with the upper lid sticking to the bottom lid, just put a small hole in the upper lid so while it helps to seal the bottom one, it won't stick to it!

      The jars can be sterilized in the oven- 220° for 30 min. 15 min in add the lids to warm them up, for putting on top of the filled jars. When it cools the lids will seal.

    I just got this stuff and have spent all day filling and sealing nearly all my empty jars. lol No more stale barley. No more un-popable popcorn. No more gummy feeling rice bags. I have been like a little kid at Christmas. :p

We must trust God fully but not sit on our hands. It’s our duty to watch for His soon coming and prepare for hard times until He appears. Love all your videos and your sweet Christian spirit.     Hi Christa, What a wonderful video you shared here. I am like you and I enjoy trying to preserve my food as long as possible to maintain its freshness. I water bath can certain things - jams, tomatoes, salsas, and pickles - but I do not pressure can. I have a glass top stove and it's not a good idea to put a pressure canner on it. So I stock different types of canned proteins that are store bought - very much like what you shared in one of your earlier videos...we love having sardines, kippers, etc., on hand in our "extended" pantry. My extended pantry is part of my "Four Corners" pantry - my fridge, my freezer, my working pantry (in my kitchen closet) and my extended pantry which is in another area of the house where I keep my foods stored for the long term in the event of emergencies, etc. But I rotate through the foods in my extended pantry and bring them up in to my working pantry so that everything stays fresh - and then I replenish my extended pantry. I also really like to dehydrate foods and then use the vacuum sealer lids - but I don't have a break bleeder - but am going to get one!! Thanks so much for sharing this great info about it!!       St paul mercantile sells butterfly 2698 canning stove that uses kerosene. If kerosene that has no dye is available in your area is not real high, this is a good fit. There are several you tubes on these.

    Excellent presentation. Thank you. I am a BIG believer in packaging in small amounts. Easier to move around, easier to use just what you need without compromising your entire supply or a large portion of it, easier to share portions, and less measuring per meal. Take a half pint jar of rice, add 2 jars of water to boil and prepare it and yield enough rice for a family-sized side dish.

    Hello Christa, I enjoy your videos. However I feel a need to clarify something on this one, the gauge you are using is not pressure as in PSI ( pounds per square inch) it is calibrated in inHG ( inches of Mercury) which is a Vacuum scale. If you look closely it should read -20, - 28 inHG is an absolute vacuum and that should be the range you strive for. Just don't want someone to get the wrong idea about vacuum and pressurization.

      At atmospheric pressure, the value 0 in. -Hg is equivalent to 14.7 psia. At the opposite reference point, 0 psia, - a perfect vacuum (if it could be attained) - would have a value equal to the other extreme of its range, 29.92 in. -Hg.

      MY gauge as two readings: *mm Hg* (which seems to read 0-30). And, *in Hg*, (which seems to read *0 to -760). There are no *psi* readings. Google mentions *psia*. Is that the same as *psi*? I have always pumped to 15 or 20. How many *psi* is that? I know that I am getting a good seal at that point. Should we be pumping to a higher number for the *perfect seal*?

    I use this method for lots of dry foods. I have had nuts, such as walnuts and cashews, vacuum sealed for several years and still be fresh when opened. I DO vacuum seal mushrooms all the time- but I dehydrate them first. They are wonderful to have on hand for soups and sauces. Coffee beans and tea are also great to store with this method. I have found that a quart jar is about as large as my muscles can handle to vacuum seal. 😊

    I love the idea of the brake bleeder! What I have done with purchased previously sealed jars is poke a hole in the lid, add a small piece of furnace tape (silver) put on the appropreate
    sealer lid and seal the jar using the original lid. it works fine. To reuse the lid again, use a new piece of tape. I only use jars with metal lids.

    Vacuum canning is definitely my favourite way to preserve, especially since I've discovered the advantage of dehydrating. It makes a big difference to how well dry things keep, especially in a humid climate.
    I've been experimenting and researching different methods of doing it without electricity. Currently I'm using the Pump-n-seal pump. The advantage of it is you can use any jar with a twist lid (recycled or new) as well as mason jars. I use two methods. In the first method, for smaller jars (under 1/2 gallon), I use a canister as a vacuum chamber, trying to match the canister size as best as possible to the jar size to minimise the volume of air I have to extract. If the jar is much smaller than the outer container I fill the space with old beans I keep for that purpose. I use the Pump-n-seal marinading lid with the little tab valve on the canister to extract the air. Once done I slip a pin under the tab to let the air into the outer chamber and the jar inside is sealed. The other method for large jars, as I haven't yet found a suitable canister, is to use the tabs directly on the lid. I prefer not to pierce the lids as the edge of the pierced hole is a place where rust can develop and the tabs can be a little less reliable, especially if a tiny bit of dust got underneath or mice get in the house and have a nibble.
    The disadvantage of the Pump-n-seal is its small capacity which requires a lot of pumping. I looked at alternatives with a better capacity. I was thinking of getting a brake bleeder, but then spotted a diesel transfer pump with a greater capacity in the search result. It is a throughput pump so sucks through one nozzle and blows out the other. I got it, but it still needs a sucktion pad at the end of the sucking tube. A quick test with holding it firmly in place showed it works. One downside is that it needs cleaning out the nasty smelling axle grease which I replaced with a more suitable oil. Another advantage of this pump is that, mounted next to the fireplace, I have a suck and blow pumping station. With a silicone tube on the exit nozzle I can fan the fire :-)

    this was really good. We are in our 709's and have always tried to be as self sufficient as possible. Since moving to a new state in a rural area we are becoming more aware of being even more self reliant and prepared for any kind of an emergency.     Thanks for the video. One thing, if you can't get the bleeder to work, put TWO lids at once. This aids with problem lids. Just remove the top lid after the pumping.

    Thank you for this. Very useful.
    My food saver comes with the option for vacuum sealing jars. But it's good to know other alternatives.
    By the way, my favourite way to preserve is by far dehydrating food and vacuum seal it afterwards. Pressure canning, very popular in your country, "kills" (for the lack of a better word) the food in my opinion.
    Freezing is an option but not for a long time preservation.
    By the way, i do the same as you've mentioned with rice and beans, freeze and vacuum seal, but I also do it with flour and pasta.

    I have used this method for all kinds of cooking supplies like flour salt sugar mixes of all kinds and a ton of dehydrated fruits veggies and powdered eggs. I love this method and can up hundreds of jars every year as well as water bath canning. This is a good way to live off grid ☺

    This is absolute genius. I am watching a a lot of these preparedness vidoes and you and Heidi's Rain Country are my absolute favorites. Everything I learn, I apply, and it works! I am guessing that anything that is properly dehydrated can be stores in a vacuum sealed jar, right? Heidi has some great tips on using this method for that. Thank you so much. Funny note, my husband and son are pretty sure I went a bit overboard when I purchased the hand wringer and buckets to wash should the power go down. Honestly, the idea of the two of them stomping around in the bathtub washing their clothes (and I have been there!) makes me smile, but I rescued them, anyway by making sure I am prepared. Thank you for your wonderful, and very fun videos.

    Jar lids seal better if they are warmed up first. I see that someone in the comments suggested putting them in the oven. I don't like to heat up my oven to warm the lids so I get my heating pad out and place them on the heating pad and fold the pad over on them, when I am ready for a lid just lift up the 1/2 of the folded pad get your lid and put the folded part of the heating pad back. I start with the pad on medium and when they are warm I put the pad on low. Works great, handy and keeps them warm. Love your videos.

However, as an automotive technician who uses a hand-held vacuum pump on a regular basis for diagnostics, it seems like you should be able to use the hose that comes with the lid system (I’m guessing it’s designed to seal inside the lid port) and then you can push the tapered end of the brake-bleeder/vacuum pump into the hose that comes with the lid sealer and you won’t have to use your other hand to hold it tight to the vacuum port. You could cut either or both hoses to the length of your choosing. The tapered end of the bleeder is designed to press fit into various sized hoses.

      Christa well states that the reason she uses the hose she talks about is the LENGTH issue. She's RIGHT, but as I am ALWAYS cautious about ANYTHING not food-grade being used in Food-Prep, I agree with the basic premise of YOUR comment- use the tube that comes with the lids you order - IF it will fit the Bleeder device PROPERLY and give the PROPER functional SEAL in the process. At THAT, cutting it a few inches shorter is a GOOD idea if a TRULY _ROBUST_ seal is part of the goal. Ok, that's MY 2c worth ! ALL the BEST - Chuck .

      Do you know of a good, fairly priced, break bleeder kit that you can recommend? The one I bought was metal, but, the metal was cheap and bent after 5 jars and then the part that pulls the hydraulic thing out broke as well. I was very disappointed. If I could find a good one that won't break so easy that didn't cost a fortune I would buy it and give it a try. I paid $21 for the one I bought. I've seen some for over $300...that is way to much money. I'd appreciate it if you could recommend one. Thank you.

      A tip to help with the pumping- rest the part of the handle that you squeeze that is the part farthest from you if you hold it like a pistol, on the counter, then push the part that is the thumb side. So instead of squeezing, you are pushing and your hand won't get nearly as tired.

    Thank you for all the time you spend researching your videos. You are very thorough. I use the brake bleeder also to reseal tomato sauce and leftovers in canning jars. It preserves them for about a week to use for another meal.

      You should check out her (I think) valentines video about her mom & dad. Her dad is so loving and kind and ‘perfect’ to the family and mom that she hasn’t quite found that special man who is just like dad.     Great video! I often use the foodsaver machine, but occasionally use my hand pump which will be indispensable when power is not available. Because hand pump goes through extreme use, I have two extra back-ups. I do this after opening an expensive #10 can of freeze-dried meat or meals. The clock starts ticking as soon as can is opened and unused food will go bad quickly from air and moisture. Quickly put the unused portion into jar or jars and pump to achieve vacume. Now the remainders will last a long, long time. Maybe not the original 30 year shelf life, but plenty long to use up the remainders. Important to store what you eat, and eat what you store; so I do methodically consume a portion of my long term freeze dried stores. Also perfect for coffee beans, jerky, biltong, dehydrated foods etc.

    Thank you so much for doing this video. I've been hearing a brake bleeder mentioned many times, but didn't know what people were talking about. I've just started learning about prepping and want to can but I am on disability and can't afford a foodsaver , or a pressure cooker. I keep looking out for canning jars in thrift shops but I think I waited too long to look. Canning and prepping is so popular these days, usually the employees get them first. I remember back in 2004 when I wasn't in to this I went to the Goodwill where they send the stuff that didn't sell at the other stores and sold by the pound , unless marked otherwise and there were hundreds of canning jars in cases under the tables! I wish I'd known then what I know now! I only have 6 canning jars I got in a box from an auction years ago. I've been keeping sewing stuff and buttons from my button collection in them, I don't have lids. I should be able eventually to afford the lids and food saver lids and brake bleeder. I have a Harbor Freight and 3 auto parts stores nearby. I will keep an eye out for sales. I love Harbor Freight and get their flyers with a 20% off coupon in every one.Thanks again!       Try looking for used jars on Craigslist and garage sales. I've found so many cheap canning jars that way.

    Love the idea of using a brake bleeder to seal jars. Never thought of it. Here's a tip for storing in buckets while still keeping foods in more managable quantities. Its a little more labor intensive, but used far less space than all those jars. The way I stored my rice, wheat, and beans in 5 gallon buckets was -
    1) I used my vacuum sealer to seal up smaller bags of the dry foods.
    2) I placed a large mylar bag in the bucket.
    3) I placed the smaller bags of dry foods inside the mylar bag in the bucket.
    4) I put more of the dried food around the small bags of dried food in the large mylar bag in the bucket to make use of all the air space in the bucket.
    5) I used oxygen absorbers in the mylar bags, sealed them, labeled the mylar bag and bucket, and placed the lid on the bucket.
    I did this so that I could use the foods in smaller amounts while the rest was still sealed. I also seal foods in canning jars with my vacuum sealer and lid attachments, but the jars take up so much space and i just didnt have enough space to continue doing that.

I was thinking about whether it was a good idea or not to do the exact same thing and here you are saying that works for you. Im going to proceed with trying to find some buckets and then search out where to get mylar bags like on amazon etc...

    I love this idea very much. Understandably it's not the same as normal canning, but as far as drawing a vacuum, this should do pretty well. I'm immediately thinking of dry rice/beans/spice storage.

    I gave away my food saver unit when I downsized. Now inm regretting that, but don’t want to spend the $$ on a whole new unit. I just ordered from A the bleeder and FS jar lid kit. You’re the first person that’s mentioned using the power release after vacuuming.

    Keep in mind, anything that is liquid based ought to be chilled as cold as possible, without freezing, to successfully vacuum pack. As you decrease the pressure by applying a vacuum, you decrease the boiling point of the liquid as well. So chilling the product minimises the chance of "Foaming" (i.e. boiling at low pressure) when you seal the bottle.

      I would never recommend vacuum sealing anything with liquid in it!! That is a very serious problem and setting yourself up for botulism!! Ask Christa about it, I am sure she would agree with that.

    fresh mushrooms unwrapped and patted dry and open to the air in the frost free refrigerators dry wonderfully well as you are simply storing then for later use. if you do not get to them they are dried and ready to rehydrate as you would a dried mushroom.

    When I vacuum seal dry goods in mason jars I fill it up to the one inch head space and I insert a clean dry coffee filter covering it well put the lid and vacuum adapter and vacuum away
