Some people are confused in the comments. He is talking about *intervals* , not scale degrees. It is an interval of a sixth. When you invert a third you get a sixth.
You just said it yourself, a 6th of G is E...look at his first lick he shows...he's using a sixth in his right hand based off of the G. So, the "country sixth" is based from the right hand root ,which is really the V of whatever chord change you're on, I.E. he does a C (root) in his left, his right hand is holding a G (V) then uses the E (VI of V) from there for the Eb-E.. It's important to have that G in the right hand to stabilize and open up the voicing.

You built the 6th interval off of the 5th note of the c and f chord, but on the root of the d.

Why are you calling this a country sixth? You are merely using the third of every chord in the top and gliding a half step from below.....this confuses people....the sixth of a C is "A" and sixth of a G is "E" etc....
There is value in the lesson, but the audio quality sucks. The vocal is almost unintelligible. It would help to have a separate mic for the speaker. The background echo is an annoying distraction. The quality of the information is overshadowed by the
lack of some simple sound engineering.
