⭐食譜内的鷄蛋是大鷄蛋,每個大約60g。
⭐食譜内的核桃如果不喜歡,可以不放。
⭐食譜内的胡蘿蔔可以盡量打碎些,吃起來會更細膩。
⭐在烘烤之前必须预热烤箱达到设定温度。
⭐因為每个烤箱都有所不同,在食譜裏的烘烤温度和时间仅作参考。
Tips:
⭐The eggs in the recipe are large eggs, each about 60g.
⭐If you don't like the walnuts in the recipe, you can leave it alone.
⭐The carrots in the recipe can be chopped up as much as possible to make them more delicate.

@@belindawang7487 可以喔,那就不用包錫紙了,蛋糕出爐後5分鐘就可以倒扣脫模,不過要小心,很容易會把蛋糕扣爛的,因爲這個時候它很軟,如果放上30分鐘,讓蛋糕回縮了再脫模就不容易爛。謝謝你~~🙏❤️👍

Hi, thank you for sharing this recipe. I'm interested to know is there a specific reason as to why the oil and grated carrots are heated in the microwave prior using? If these 2 ingredients not heated, will it impact the final outcome? This cake reminds me of the lovely chiffon cake with the addition of carrots and walnuts. Thank you so much for sharing this lovely cake recipe.
Because the hot oil will blanch part of the carrots, it will also dissolve the sugar easily, making the muffins more fragrant and sweet. If you don't heat, no problem. But heating will be better. Thanks and have a great one! 🙏❤️👍

I always like the carrot cake, usually the texture is very dense , but this looks very light and fluffy!
Did you puréed the carrot? No need to add the baking powder at all, and the carrots won’t weigh the batter down..
I’m tempted to give it a try….
This cake only use egg whites to let it fluffy, you don't need to add baking powder or baking soda. That's very healthy. Carrots can be chopped with blender until very small, without being pureed. Don't worry, carrots won't sink to the bottom easily if you make them like I did. Thanks and have a good one! 🙏❤️👍

I suppose I can try increasing each ingredient by 50% including the egg white and yoke (by weighing them?) would you have any specific recommendation please? or should I just go and purchase a 6 inches x 3 inches tin? 那個酸奶蛋糕因爲放的麵粉少,所以回縮比較多,不介意的話其實是超級好吃的。如果想回縮少些,可以多加些麵粉,不過麵粉加多了,就相當於改變了份量,那口感就會有不同。另外這些蛋糕想沒有一點回縮那是絕對不可能的,除非加泡打粉或蘇打粉,不過我覺得沒有必要,加了就已經是另外的一類蛋糕了。謝謝你!🙏❤️👍

老师,今天又试烘了这蛋糕。因为我是用6"方模,所以我照着您的指示 成1. 33。时间烘了90分钟才熟透。蛋糕出炉后,我让它留在模里5-6分钟才转去cooling rack放凉。蛋糕没榻。150度时间需这么长吗?
因爲烤爐的新舊,大小對烘烤的時間和溫度都會有不同,最重要是你瞭解你的烤箱,在不烤焦的情況下讓蛋糕熟透,所以你用90分鐘也不奇怪的。謝謝你!🙏❤️👍

老師,你以低速打蛋白,大概需要多少時間?其實我每次打蛋白都是戰戰兢兢!
不用怕,你只用1檔去打,打前最好放入冰箱冷藏10分鐘或放在冷凍櫃5分鐘,打到蛋白霜細膩很有光澤就差不多了,多拉起打蛋頭幾次,觀察蛋白霜的勾怎樣。這樣就不容易打發過度了。因爲鷄蛋不同,即使是我,每次打發的時間都不一定相同,通常5分鐘左右,但最重要還是學會觀察蛋白霜的狀態,打好後你把整個盤側著,如果蛋白霜緩慢流動,那就可以了。祝你成功!謝謝你!🙏❤️👍
