What exactly does it mean to set the bend relief type to "tear"? As opposed to the other 2 options?

Is there anything like a mitered edge flange. Where you can sketch the edge flange than pick the edges you want it to apply to. Like in solidworks?
I could not see how you managed to put the angle at 6:40... noob of mine..
