    Hi David! About the texture of the carrot cake, this is a recipe normally made by grandparents and therefore the measurements are not usually exactly precise. It's actually quite common to make mistakes with this cake as you can't know exactly how big the carrots will be needed in the recipe. I don't know very well which recipes are available in English, but in general, to be successful, I usually use a recipe with the weight of carrots that will be needed. (sorry for the grammar, I don't have the best English so I used Google translate)

      Yes! Absolutely correct, and beating the eggs and oil for a long time before adding the sugar and beating it even more afterwards help with the texture. I even had a recipe which used the egg whites beaten separately to make the cake fluffy!

      @@vinramos eu sei que todo mundo faz, o que eu quis dizer com isso é que é uma receita que vêm dos nossos avós e que como muitas outras receitas de bolinho de café não tem aquelas medidas tão precisas, eu particularmente conheço um monte de gente que já embatumou bolo de cenoura por errar a quantidade de cenoura. Mas enfim essa é a minha experiência e não define a de todo mundo.

    Hey David! Brazilian here! I think you actually didnt add enough carrots to your cake! They help add moisture and make the color the super vibrant yellow you see in videos/photos. Also next time let it go in the blender for MUCH longer until the mixture turns a brighter shade of orange from the sugar dissolving and everything emulsifying.
    PS im team brigadeiro on carrot cake, and everything else for that matter!

      also, the best carrot cakes i've eaten have boiled the carrots to make them soft before adding them to the blender. idk why, but it makes a huge difference

    Hey david I'm the person how suggest the carrot cake because it's one of my favorite cakes, I love even by itself without any topping. It's a kinda hard recipe or a least a very easy one to go wrong 😂 But you did pretty good for the first time, I hope you revisit again someday cause when its "fluffy" and moist its even better. Been following you for 5 years and I'm really happy that you tried some Brazilian recipes, hopefully we can have some more in the future. 💙🇧🇷

    Hey, David! Brazilian over here. Next time, follow these measurements: 2 cups of shredded carrots (it's about 2 carrots, press it goodly), 3 eggs, 1 cup of sugar, 1tbsp of vanilla, 3/4 cup oil - blend those. 2 cups all purpose flour, 1 tbsp baking powder, 1/2 tsp of salt (sift and mix with the liquids. Do not mix too much). The batter should be runnier than the one on the video. Also, you can throw a pinch of cinnamon and nutmeg to that brigadeiro to make it even better. Hope it helped 😊

    i think you should've added a bit more carrot (that's my personal preference) and blended it more. besides, you should add the dry ingredients gradually so it wouldn't form these chunks. i'm not a baker, just a carrot cake lover.

    I'm not Brazilian but I lived in a dorm with a bunch of international students and this one Brazilian girl got me hooked on the cake and it was literally supposed to be my wedding cake until covid changed our plans. When done correctly it is wonderful.

    for the carrot cake!:: its not carrots you put in but the weight of the carrots you put in. cause some carrots might be skinnier than others or larger than others.
    search for a recipe that has weight measurements! and also relax, the cake doesnt rise that much hahhaha

      and to answer your question: the brigadeiro isnt the ORIGINAL sauce but it is the most popular one i guess. the classic usually has a more syrupy chocolate sauce! also that WAS probably too many carrots. but it IS your first time trying so dont give up!!! my first carrot cake was not the best either!!!

    My guess on the Brazilian cake not rising is altitude difference. If the person whose recipe you used lives in Brazil, they are like 3000ft above sea level vs. NYC being 33ft above sea level.

    @DavidSeymour .... for the Boursin recipe you can pre toast the panko in a pan until they're golden before dredgeing ....I do this for low fat oven fried chicken, works great :)

    Only made homemade carrot cake once, and it was a recipe that used grated carrots rather than pureed. The cake was so moist and flavorful, probably the best cake I have ever had.

    Hey David! I’m from Brazil, some tips to make a better cake is to use only 3 medium carrots and put only oil, sugar and the carrots in the mixer for 5 mins, then you add the rest, that’s for the cake to rise properly. You did great!

    That baked bursin thing is actually kind of ready made avaliable in europe. In germany it is called "Backcamembert" which means Camembert for baking. You can buy them already breaded and they come usually with jam. Even if they are called for baking they are mostely made with some oil in a pan. Both sides medium heat for a few minutes. When the roof started to buldge the cheese inside is liquid and ready to get eaten.
    We mostly eat it with a good rusty bread and some tard-sweet jam.

    I think the boursin cheese thing would be better as a baked brie type thing. Instead of a dredge, just cover it in puff pastry, egg wash, and bake.

    The brigadiero frosting is basically how I make fudge. 1 can sweetened condensed milk (making your own with cashew milk powder, sugar and water is a great sub) and 1 bag of chocolate (or butterscotch, peanut butter, etc) chips, plus a splash of vanilla and any mix ins. It is wetter than many fudge recipes and needs to dry out for a couple days. (I pour mine onto parchment, and then flip it and peel the parchment off after a day)

    Heya David! I make this Bolo de Cenoura ( carrot cake ) fairly often for my Brazilian partner :). I have noticed I get the best results when 1) make sure to add a tablespoon of baking powder. 2) I have experimented with seperating the egg whites, whipping them separately and then folding it in with the batter mix at the end . 3) alternatively, once you mix the cake batter, use an electric beater or whisk to introduce as much air into the mix as you can ( but don't overbeat ;) ) . Also - at the end I would have turned the cake right side up before adding the topping :) . But - all in all what you did looks right! Also - I recommend trying out another desert - Pavê de Natal

However, you could start with vocal rest and gargling with warm, not scalding hot, salt water a few times a day. Love your channel so much!

    I'm wondering why cheese girl didn't just spray or brush the breaded cheese with oil or butter before she baked it. You might want to try gargling with warm water with salt stirred into it a couple of times a day and before bed to relieve your throat and expedite healing.

    Regarding the carrot cake, I was in awe with the blending power of your blender. Most people here in Brazil don’t have powerful blenders like yours 😂 it’s a difficult recipe to get the right consistency and you did wonderfully for your first try!     TRY THIS RECIPE OF BRAZILIAN CARROT CAKE!!! ITS THE BEST!!!! Works every time!!!!! You probably added too much carrot, this recipe has the perfect amount!! and the traditional brigadeiro, we used powdered chocolate, but yours was beautiful!
    270g carrot
    1 cup of oil
    3 eggs
    2 cups of sugar
    2 cups of wheat flour
    1 teaspoon baking soup
    Blend the carrots, sugar, oil and eggs in a blender for about 5 minutes and then mix in the dry ingredients.
    TRUST ME!!!!

    The more carrot you add, the heavier it will be, so it will grow less. Although is simple there is kind of a perfect balance between the quantity of ingredients to be flavorful and moist and light. But overall, amazing!🇧🇷❤

    i got a recipe i made before hashbrown the type that looks like thin frie strips a little bit of flour like a cup a few eggs to get that batter consistency and i think it was like a half a cup of whole milk don't cook the hashbrowns and a little bit of butter blend them all together then add a pinch of salt and use any type of oil of your choosing but i prefer vegetable oil and then fry them up in a pan and then drizzle it with ketchup after it's cooked

    Hi David , new brazilian follower, you forgot the rising powder bro. Also, you need to blend the carrot, about 2 cups, with the oil and the sugar, until it's smooth, then mixture the flour without beat it too much, little by little, and then the baking powder 😅 that's why it didn't rise

    Re: The voice... Did you just get your Covid booster? I got horrible dry and scratchy throat and sinuses about 12hrs after my booster and it lasted 2 days. I got the Pfizer booster, my nurse practitioner friend said they were seeing people feel yucky after the new boosters.

    For the carrot cake, maybe you can see the recipe from Raiza Costa’s channel. She is Brazilian and lives on USA.
    Maybe this is a better recipe for you. She do a more tradicional frosting too.

    if "the game" refers to mnf i am so so sorry (as someone who also suffered). also the mac n cheese pancakes remind me of zach from the try guys making mac n cheese waffles for a without a recipe episode and i feel like you'd enjoy that a lot since you enjoyed the pancakes so much!

    You probably just strained your vocal chords so they might be inflamed. You’ll be fine lol my moms a nurse and it happens quite often. Try some honey and warm milk because honey is good for your throat since it’s Antibacterial and antifungal plus it soothes too. Hope you feel better!

    I know you said not to comment on the voice, but I'm doing so to tell you it's probably fine. Laryngitis sounds like hell and can be uncomfortable, but it goes away on its own, and you were doing a lot of yelling ( I assume) so it makes sense you'd have it without having been sick. I have had my voice drop out mid phone call as a receptionist because the office was dry and chilly and my throat just went, "Nope. Not today."

    I have a recipe for a perfect brazilian carrot cake. You have to weigh everetyngh in order for it to bem perfect.
    270g of peeled carrots
    300g of sugar
    3 large eggs
    200ml of vegetable oil
    240g of flour
    8g of baking powder
    a pinch of salt.
    Blend the carrot with the sugar, oil and eggs.
    Mix flour, salt and bakind powder
    Bake for about 40m
