      Ok just made the Civiche tostadas!! Shot a few mangrove snapper.. had to actually purchase my star fruit... othe than that followed your recipe to the tee....dude.. from the bottom of heart thank you for taking the time to put this up.. seriously hands down the best ceviche ever and my favorite dish on this planet. You are the ma times a thousand!!!!!

    Great team, really like the format and very unique to the fishing channels. Typically everyone does their own catch/cook BUT 2 have a commercial fisherman and a real Chef?🤯🤯🤯
    Really hope you guys stay glued, this could get exciting!
    Btw i saw Sam the cooking guy dice cucumber, lightly saly and sit in a strainer for 30mins and most of the water drained out, just leaving cucumber meat...thnx again for great video..ceviche looks awesome!

    I know im late to the party but this looks good. I like making ceviche with vermillion snapper/b liner. Soft but have a little texture.

    This all looks to die for ., I haven’t had anything but Maine Lobsters . I agree the Mayo is a food killer ! A dab will do ya . I like your channel buddy . Up in Seattle I’m trying to get a good Ceviche recipe . Don’t like bell peppers do like a hot pepper 🌶.

    Awesome vid as usual. You come across really well on camera - I know it’s not easy! Glad you and Aaron are doing more stuff together. My two favourite channels for sure. Do you think ceviche works as well with an oily fish? I’d like to try it with Atlantic mackerel which are plentiful here in the summer (UK)

      Thank you so much!! I do it with Spanish and cero mackerel and I’ve made crudo with bluefish up in NY. Give it a try and lemme know how it goes, we call them Boston mackerel and I absolutely love them. You could try pickling them like in my herring video but then mixing ceviche ingredients

      @@CookingWithClams Thanks man. Big fan of them too - hot smoked served cold with horseradish or masala spiced fillets done over charcoal are two of my favourites. Going to give them a try in ceviche when they come inshore I reckon

    Heck yeah , that’s how I make my ceviche too, pomegranate seeds 👌🏼👌🏼. I made the mistake of adding pineapple once and it turned my fish into mush 😂

    Imposter Limes! I know exactly what you mean. When you’re picking limes, pick the one with a smooth “thin” skin. The rough thick skin likes seem to be the “imposters” most often.

    Great video Will! The food looked amazing, but we have slight differences of opinion in what makes a lobster roll great. Personally, celery has no place in any sandwich, nothing but bad filler. Green onion is a much better flavour. That said, every town or area in Atlantic Canada or New England had a different idea on what makes a lobster roll great but the ‘roll’ had to be buttered and toasted. Great job.

      All in the video, I don’t measure but go by taste. I boil tails 9-11 minutes in very salted water with a little white vinegar. Chill then crack and chop up. Add lemon juice, garlic salt, and just enough Mayo to make it look wet. And butter toast the top split bun, that’s key!

      I absolutely will! I’m a private chef on a sailing charter. If the tail is that big you’ll definitely need to adjust boiling time
