Great team, really like the format and very unique to the fishing channels. Btw i saw Sam the cooking guy dice cucumber, lightly saly and sit in a strainer for 30mins and most of the water drained out, just leaving cucumber meat...thnx again for great video..ceviche looks awesome!

Do you think ceviche works as well with an oily fish? I’d like to try it with Atlantic mackerel which are plentiful here in the summer (UK)
Thank you so much!! I do it with Spanish and cero mackerel and I’ve made crudo with bluefish up in NY. Give it a try and lemme know how it goes, we call them Boston mackerel and I absolutely love them. You could try pickling them like in my herring video but then mixing ceviche ingredients

Imposter Limes! I know exactly what you mean. When you’re picking limes, pick the one with a smooth “thin” skin. The rough thick skin likes seem to be the “imposters” most often.
Amazing Will. I enjoy cooking for people and see their reactions. I love food but when I cook , i dont eat that much. It's just about making my wife , family and friends happy.
Great video Will! The food looked amazing, but we have slight differences of opinion in what makes a lobster roll great. Personally, celery has no place in any sandwich, nothing but bad filler. Green onion is a much better flavour. That said, every town or area in Atlantic Canada or New England had a different idea on what makes a lobster roll great but the ‘roll’ had to be buttered and toasted. Great job. Thanks for sharing!!!

All in the video, I don’t measure but go by taste. I boil tails 9-11 minutes in very salted water with a little white vinegar. Chill then crack and chop up. Add lemon juice, garlic salt, and just enough Mayo to make it look wet. And butter toast the top split bun, that’s key!
