    Its my favourite dish too after eating at a local Szechuan shop in Adelaide. Its called the Yummy box cooked by the owner and chef. Absolutely lip smacking! In Singapore,, I’ve tried at a hawker ctr and I found it very medicinal due to the overwhelming broad bean paste. At home we can control e portions and I’ve tried ur recipe and it perfectly suits our palette. Thank u sooo much for sharing

    First ever mapo tofu recipe we tried and my family loves it! We did it without sichuan peppercorn since we can't handle too much spiciness/numbess and yet it tastes good! TQVM for the recipe!

    Looks so good. I can feel sweat forming on my forehead. Local restaurants never makes it spicy. Mild at best. I tell them....Make it spicy, but they don't. Thanks for sharing.

    i love a little bit spicy but i always add a pinch of sugar to enhance the flavor and brings the umami's wonderful in your mouth

    One of my fav dish also.
    Last time crystal jade kitchen singapore also used to have mapo tofu but they deep fried the tofu instead. Now can’t find them anymore.

    I find the taste is unique and not my usual acquired taste. It tasted salty and savoury, not like your usual Chinese dish. Maybe I should have added a teaspoon of sugar, or just get used to the taste to appreciate the dish more?

    do all mapo tofu use broad bean paste or just your recipe? i got g6pd and allergic to broad beans. i’ve eaten mapo tofu before but not gotten sick. so im wondering is it just your recipe?

      Good morning Sharon. Are you staying in Singapore? You can look for the 香辣酱from Shengsiong or Yuhua. Click here to see how the bottle looks like wap.okmaicai.com/product/ProductDetail.aspx?pno=LB081700808 / As for chicken stock, we like CP chicken stock. It comes in a pack of 200ml concentrated solution. You have to add 300ml of water to it. If you can’t finish the chicken stock at one go, you can put the balance in a jar/bottle and leave it in the fridge. Hope these help.

    Hi. How much cornstarch and water did you use for the cornstarch solution? And how long do you typically simmer the tofu?

      Hihi. To make cornstarch solution, you can mix 1 part of cornflour to 2 or 3 parts water. For example 1 teaspoon of cornflour with 2-3 teaspoons of water. Usually when we mix them, we aren’t so precise though. Don’t add too much water to the cornflour. As long as the cornflour can all be dissolved when you’ve stirred it, it’s fine. Kindly note that if you’ve premixed the cornstarch solution, just before you pour the solution in, please mix it again cos the flour usually sits at the bottom of the water after some time. As to how much of cornstarch solution do you normally use in a dish depends on how thick you want the gravy to be. It’s entirely up to your preference. Regarding your question on simmering, please simmer until the liquid in the pan is reduced by half. Timing wise depends on your heat as it varies from stove to stove. Hope this helps. Happy cooking!

      Hihi. You can use any brand. Just look for these words on the bottle 香辣酱. It means fragrant spicy sauce in Chinese.
