I absolutely love this build man! Ive got a 83 Honda Shadow i bobbed (without hardtailing), a 2020 Harley 48, recently bought a 2023 Triumph Street Triple and ive got my brothers old 83 Shadow he chopped up alittle back when we rode together and he didnt have a family lol. Which ive been debating on building a Cafe Style bike out of, but i couldnt find many people who've used the shadow as a Cafe platform. This bikes awesome man! Clearly ALOT of work. Awesome job man!
It's going to be more than just buying a few parts, unfortunately, I had to make quite a few changes to the frame itself. The heart of it is a set of Triump Daytona 675 forks and a Honda NT650 swingarm running a VFR800 wheel.

Sounds way better did you rejet the carb
Yeah I'm running 45 pilots and 130 mains. It still needs a little tuning but that's really close for open filters and headers.
What is that can on bottom with hose going to it?
That's a coolant reservoir

Have you looked into the NT 650 cams and vlx 600 valve train and running vlx 600 CDI it would go with your theme of budget build.
