We're saying goodbye to reality & escaping to our off grid remote Alaskan cabin in the woods! Join us in the wilds of Alaska as we explore, adventure around, cook good food & enjoy Alaska's winter terrain!
FRENCH BREAD RECIPE:
1-1/2 TBS instant dry yeast
2 cups warm water
1-1/2 tsp salt
5 cups all-purpose flour
1 large egg beaten
How to make it:
1. In bowl of stand mixer, add water, yeast, salt & 1/2 of the flour. Knead on slow speed until the flour starts to combine. Increase speed & add the remaining flour. Mix until dough pulls away from the sides.
2. Transfer dough to a lightly greased mixing bowl, cover with a towel & let rise until double in size, about 1 hour.
3. Divide dough in 1/2. Roll each half into a large rectangle. Roll up tightly from the long end. Place onto lightly greased baking sheet or french bread pan. Cover & let rise 30-45 min.
4. Preheat oven to 375 degrees. Use sharp knife & cut diagonal slashes on the top of each loaf, about 1/4 inch deep. Brush loaves with beaten egg.
5. Bake for 35-40 minutes, until golden brown. This bread freezes well too if you want to save a loaf for later!
PASTRY DOUGH:
2 cups all-purpose flour
1 tsp salt
250 g unsalted butter frozen
2/3 cup water ice cold
Combine flour and salt into a large bowl and place it in a refrigerator for about 15 minutes. Next, grate the frozen butter into the flour, occasionally mixing it to prevent the butter from sticking.
Make a well in the center of the bowl and pour in the ice cold water. Mix it until you have a firm, rough dough.
Wrap the dough tightly with plastic wrap and leave in a refrigerator for 30 minutes.
Roll the dough out onto a lightly floured work surface, kneading it gently to form into a smooth rectangle. Keep the edges straight and even and don’t overwork the butter streaks - the dough should have a marbled effect.
Fold the top third down to the center, then the bottom third up and on top of it. Do the same with the sides. Roll the dough out again to three times the length and into a rectangular shape. The pastry dough should be about 1/4 inch thick.
Place the parchment paper on top of the dough, folding it over the top and bottom of the dough. Wrap the dough with plastic wrap and let it chill in a refrigerator for about an hour or even overnight if you’re not quite ready to use it!
BLUEBERRY ORANGE TURNOVERS:
4 ounces cream cheese, softened
2 tablespoons granulated sugar
Half teaspoon organic orange zest
Half teaspoon vanilla extract
Half package, frozen puff pastry, sheets, thawed about 17.3 oz OR (use my homemade pastry dough recipe)
1/4 cup fresh or frozen blueberries
One large egg, separated
One cup powdered sugar
4 teaspoons orange juice
How to make it:
Preheat oven to 375 degrees F.
Combine cream, cheese, granulated, sugar, zest, and vanilla in a small bowl; set aside.
Roll out pastry dough on a lightly flowered surface. Cut the dough into 4” squares.
Spoon about 2 tablespoons cream cheese mixture in center of each pastry piece. Top with one tablespoon blueberries.
Brush edges with egg yolk, fold into triangles, and press to seal. Place on parchment or nonstick aluminum foil lined baking sheet.
Bake pastries 15 to 20 minutes or until golden brown and puffed. Cool on a wire rack. Whisk together powdered sugar and orange juice in a small bowl. Drizzle over pastries.

I’m sad that all images of Kellen have been removed from the intro, gosh that really broke my heart. I understand why and it wasn’t something you wanted to do, and I assume it was requested from others in control of him. I’m praying. I will say I absolutely love the photo of him in the life vest.

We all have to keep moving forward, no matter how much our heart is breaking. My heart hurts for your whole family and Kellen too. I am so happy you have been in communication with him. You were the stability and structure he needed. That being said, your family still needs to have fun and find your new normal. Your remote cabin is the perfect place to unwind and recharge. We use to have a place at a lake only 40 miles from home but that was our favorite place. No cell service…..no internet……just time away from reality❤️. I see why you love your remote cabin.

I was happy to see you all three going on your journey to the remote cabin, but I had tears for Kellen, as he was watching this too mostlikely, and missing you all terribly, and the fun he had while with you. I had heartache for Parker, as I know he had to be missing Kellen so much while sledding down that hill. I have heartache yet for you and Joe, as the parents of Kellen while having him, to the best of your ability, nurturing him and teaching him. I pray each heart involved gets comforted. I pray that Kellen's mom can see what you and Joe can give and teach Kellen, that a single mom can't. I pray she could love him enough to let him come back to what's best for him. That's hard I know, but sometimes we have to hurt to do what's best for our child. There is no color of his skin in your world, but there is in his right now. Good to see you at the cabin in snow so you can really relax and not feel like you have chores like mowing etc. The dogs are amazing. Im going to try your pastry and bread recipes. Im so tired of seeing bioengineered food in the stores. It makes me want to throw it on the ground. I mostly buy organic but food prices keep escalating.
