- Here is the full recipe for this Heavenly Soft Raisin Muffins that you can also make at home
INGREDIENTS
1/2 Cup unsalted butter
softened at room temperature
2 tbsp flavorless oil (sunflower
seeds oil, canola oil...)
1 cup caster sugar or
granulated white sugar
2 TBS lemnon zest
3 medium eggs at room temperature
2 TBS lemon juice
2 and 3/4 Cups all purpose flour
2 and 1/2 tsp baking powder
1 cup milk at room temperature
200g (7oz) raisins
1 tsp flavorless oil (such as sunflower
seeds oil, canola oil, avocado oil)
1tsp all purpose flour
INSTRUCTIONS
Line a 12 medium cup (it 6 large cup) muffin pan with paper liners and set aside
Preheat oven to 396F/180C
In a large bowl, place
softened unsalted butter, sugar,
vegetable oil and mix with a whisk until well combined
Sieve together all dry ingredients
Gradually start adding dry ingredients to wet ingredients alternately with milk. Repeat the process until all flour and milk is finished and a soft batter is formed.
Soak raisins in 1tsp oil then add 1tsp flour ( this is to prevent the raisins from sinking) then add to the batter
Incorporate and mix thoroughly. Do not overmix
Scoop batter on to the lined muffin cups
Bake and enjoy them cool with a glass of milk, juice or any beverage of your choice
