    Cinnamon Rolls: 3/4 c milk, 1/2 c sugar, 1 t salt, 1/2 c olive oil, 3 T yeast, 1/3 c water, 3 eggs, 5.5 c flour
    30 Minute Rolls: 3.5 c water, 1 c oil, 1/2 c honey, 4 T yeast, 3 eggs, 1 T salt, 10.5 c flour
    Pizza Crust: 2 t yeast, 1 t sugar, 1 c water, 2.5 c flour, 2 T oil, 1 t salt, oregano and garlic powder to taste
    Pumpkin Muffins: 3 c flour, 4 t baking powder, 2 t cinnamon, 1 t nutmeg, 1 t ground cloves, 1 t salt, 2 c pumpkin puree, 1 c sugar, 4 eggs, 1 c olive oil

    We jumped into the pantry challenge this week with great gusto. Over Christmas, I received a bag of birthday cake granola and didn’t have a clue what to do with it as it doesn’t sound like something I would just eat out of a bowl with milk. Yesterday I threw it in my food processor added five tablespoons of melted butter, pressed it into a pie pan as a crust. I love the creative aspect of the pantry challenge.

    Thank you for sharing your journey. I’ve been watching others participate in this challenge for a couple of years, but never jumped in. This year, god put on my heart that I could be a better steward of our resources. My version of the challenge is a little different, but it is meaningful for my family. We have freezers full of meat, a fully stocked pantry of dry and canned goods, and I was still mindlessly buying large amounts of groceries every week. With your inspiration, I took a thorough inventory, am intentionally planning meals around making the best use of what we have, and learning to replace grocery store items with far healthier homemade versions. I now make all of our breads, rolls, bagels and other baked goods, and am planning to begin yogurt and mayonnaise this month. All those beef bones are finally turning into bone broth, and I’m getting the lard rendered and using it. I’ve reduced our weekly grocery budget by 75%, and am committed to this over the long term. Accounting for our yearly meat purchases, Azure order, and bulk household stock up, we are still down over 25% for the year. I just wanted to say thank you for helping set perspective on how important it is to be intentional in the use of what we have, and continue to build our skills to nourish our families.       This sounds like our exact situation. I plan to inventory soon! I have had grand plans, but my 7month old is determined to learn all the things in her growth spurt, so I’m just trying to keep meals on the table! 🤪

    As a reminder, from a couple years ago, use lard and bacon fat when cooking potatoes (instead of your olive oil) so you don't run out of olive oil before March 1st. ❤️

      I alwayssss keep bacon grease and use it on everything i can! I even froze some of it in a large ice cube tray and the rest is in the fridge for easy use. Bacon grease on potatoes is soooo yummy!!❤

    I am so delighted to have you back in my Sunday morning routine. You holiday break was a fabulous way for your family to spend time together, it's great that Adam has weeks off to be there as well. I am all in on a no spend 3 months in the pantry challenge. I am also doing the Canuary to work on making some of my freezer stores into shelf stable items. I canned up some Italian sausage as well as some ground beef. I had one jar out of 21 not seal, so I decided to make pizzas. I used a 1925 prize winning bread recipe, that calls for potato and potato water,it makes 4 loaves of bread. I did 2 loaves of bread and 2 13x9 deep dish pizzas. They are good, but next time I will parbake the crust to get the a little crispier, vs the soft texture. We topped with freeze dried mozzarella cheese, red onions,mushrooms,and peppers. Then fresh was pickled banana peppers, olives,and I sprinkled granulated garlic over the edge of the crust. It took 45 minutes to bake, because it was so thick. After watching your woodstove simmering soups, I see soup in my future. Here in Northern Michigan, we finally are seeing winter weather, so soup is perfect. I used your idea and made cranberry gelatin from juice I needed to use up. It didn't seem to have as much cranberry flavor after it set up?? Not sure why. Looking forward to more videos from you as we work through our pantry.😊

      Prize Bread Recipe 1925
      1 medium size potato
      2 c potato water
      2 c scalded milk
      2 T lard
      2 T butter
      2 T sugar
      1 t salt
      1 cake fresh yeast dissolved in 1/4 c
      warm water.
      About 10-11 cups of flour
      Mix sponge of lukewarm potato water and the mashed potato, yeast and about 3 c flour. When this is foamy, in about an hour, add lukewarm milk in which the lard,butter,sugar, and salt have been added. Add the rest of the flour to make a soft dough and knead for 15 minutes. Then grease the top of the dough. Cover and let rise in a warm place until doubled in bulk, about 1&1/2 hours. Turn onto slightly floured board, knead out all bubbles. Form into loaves. Put into greased pans, greased top of loaves and again allow dough to rise double in bulk. Bake 50 minutes in moderate oven, increasing heat after 10 minutes. When bread begins to brown, decrease heat. Finish baking in slow oven. Makes 4 loaves.

    okay I have to stop watching the video for a second, and just say thank you for sharing your inventory sheet. It may seem simple to you but I have been trying to figure out a way to keep the inventory without having to erase all the time and I super love how you did it. Also wanted to say I love all your videos that you share about the meals and how you plan them out, it doesn't matter to me if you share the same meals because that's real life! Thank you for the time and effort you put into your videos!

    I love this pantry challenge Jessica! It inspires me to use up what I have in the back of the cupboards and in the deep freeze that never see the light of day. I have a small 800 sq foot garden in an urban setting where I grow as much as I can -- approx 120 jars or so -- nothing on the scale of others but, as you say, every little bit counts :) ! This challenge makes me mindful to go into the basement and dig out the meats from the freezer instead of using what's readily available in the kitchen fridge freezer. Thanks so much for the inspiration!

      I only have a fridge freezer, but am finding foods in the back I need to use! It's the middle of the month and I've only bought milk and bread without even thinking about it! Yay!

    I love all your inspiration for your meals! I have a suggestion for your dairy free family. I make a dairy free “cheese” sauce that is really easy.
    1 cup chopped carrots, 1 cup chopped white sweet potato 1/2 med onion chopped, 2cloves garlic sauté in saucepan with 2 tbsp avocado oil for about 5-7 min. In a separate bowl whisk 1/2 cup chicken broth, 1 1/2cup coconut milk, 4tsp arrowroot powder, 2-3 tablespoon nutritional yeast,2tsp apple cider vinegar, salt and pepper
    Add to saucepan and bring to boil then turn heat down and simmer for 15-20 min. After it cools slightly blend up. It is great to make cheesy soups like broccoli cheese, cheeseburger soup or over nachos etc. Enjoy

    Fairly new subscriber. I kept seeing other channels I watch mentioning you and the pantry challenge. I am learning so much from all of you. I am not doing the pantry challenge as far as not buying anything but, I am making myself use what I have and research recipes for items I don't normally use that are on the shelf. I am taking care of my family which includes my husband, son and my dad with Alzheimer's. He has things in his pantry that I don't normally use so that is why I am researching how to use these items. We do garden and can some. I want to broaden my skills with this and become a better steward with my resources. You have a truly beautiful family. I homeschool too. I am happy I found your channel.

    This is my 2nd year doing the panty challenge but with a twist. All my meals are from home, even when I have doctor appointments that 4 hours from home I take my breakfast, lunch and snacks with me. The money I have saved these last two years allowed me to take my dream vacation this year thanks to you.

    I do a lot of baking and always zest/micro plane the rind of the lemons before juicing. I freeze it for use in baking, I was wondering if you considered that, especially since you mentioned wishing you had used grapefruit zest.
    I love how creative you are in your meals and the no waste mindset. That is how I grew up and continue with my family now.

    I love the idea of the spinach in the quiche. I have tons of the freeze dried zucchini and spinach, but for some reason, never thought to use it this way. Thanks for the great tip.

      I tried some yellow squash in a dehydrator. It was too hard to eat as a snack like I did my okra so now I'm going to throw it into the processor and grind it up and add it to just about any and everything because it doesn't really have a strong flavor.

    @16:00 you could chop pears into the chicken salad! I do grapes or apples, Almonds for older kids if no allergies. Believe it or not, tiny stuffing bread cubes (homemade or store bought) soften a bit in the dressing you make but retain some crunch and stretch the expensive chicken breast!

    Incase anyone is low on yeast or wants to speed up their sourdough, you can capture wild yeast from dried pine needles or juniper berries or even dried elderflowers! add 1tbsp of desired product, 1tbsp of sugar/honey/maple syrup and 4tbsp of filtered water in a jar. put a lid on, shake well for a couple days (mine takes 3days), strain and use the liquid in place of water for your sourdough or dried yeast. :) My favourite is Juniper berries, but I've had good success with the others. Elderflowers are a bit quicker as a side note.

    Im doing the pantry challenge along with you. Even though i am alone at 73. Yesterday a baked a whole chicken from the freezer.
    Today im going use the leftovers to make chicken noodle soup and it is cold today so soup sounds great to me.

    I’ve joined the pantry challenge and this is my 2nd year. The week has been great so far. It’s just myself and my husband at this stage of life but once a week it’s his turn to take dinner to his mother that has Alzheimer’s. It was nice to be able to use up what was in the fridge and make a beef stew with some rolls for her. I was telling a friend about the challenge and had mentioned I need to start some sprouts. I use the same type of sprouting lid and like the ease of it.

    This is my second pantry challenge- I’m so excited and ready to go - it’s following my second full garden season too (2.75 in total) and it’s great getting into using up older items to make sure that nothing is wasted.     Hello You are INCREDIBLE!. I love to watch your videos and see your beautiful family! I live in NE Florida and I have 2 big Orange trees and a lemon tree. They were ready very early this year. I picked ton in the first of December and usually they are not ready until December 31 or after new year. I just want to hug those children. Especially the baby !

    Going on from you saying about an empty soup pot is easier than having to save putting away leftovers, I think that knowing your children have a good belly full of healthy nutritious food is a really good feeling as a mum. Like ensuring your son has a good breakfast ready for work. I think it’s imprinted into us isn’t that us mums are feeders and all we want is our children to thrive in the best way possible xx
    Edited to add that I bought some cannelloni pasta tubes back last summer because I couldn’t find any of the pasta shells that you used and they’re on the menu for this week so I’m going to do it kind of like a lasagne but with tubes 🤣

    (Wife typing) Hello, Jessica! I've been watching you all for a few years now and cannot tell you how encouraging your channel is to a fellow homesteading, homeschooling large family!
    I wanted to toss you a tip with water glassed eggs. You mention you use them in baking because of the yolk breakage. I have found that if I refrigerate my water glassed eggs overnight before use, 9 times out of 10 the yolk "reconstitutes" and comes back together. I hope this helps when eggs get low this winter!

    We are doing a version of your challenge too. We are buying necessary items at the grocery store but mostly creating meals strictly from our freezers and coldroom (pantry). My husband and I decided for January and February we were going to buy very little from the stores and focus on using what we have preserved and stored. So far it's been going very well! We raise or hunt most of our own meat, and grow a garden every year along with canning lots of foods that are seasonal to our area when they are available. I enjoyed your video. I am definitely going to try a breakfast casserole similar to the one that you showed. Thank you!

    Happy new year to you all! I love your channel and love how creative you get! I started home preserving a few years ago and I’m still learning. I live in an apartment and turned my coat closet into a pantry it’s a tiny pantry. I have to be very intentional about the things I can or preserve due to limited storage. I thought I wouldn’t be able to do this challenge until I had a house and a garden and a basement to store my food. I am following quite a few channels who participate in your challenge and I have learned that I can as well and it is Tailored to me. You have taught me so Much and I want to say thank you.

    Good morning, Jessica! I enjoyed seeing how you prepared for the challenge with that chart. I may use that idea with our own inventory. Our goal is to use up what we have. I have not yet mastered the art of rethinking leftovers into something new the next day. I need to work on my menu planning. I cannot wait to see how your sourdough starter comes out!     We freeze dry pumpkin and powder it. Same with Georgia candy roaster squash. It makes it perfectly compact and then rehydrating it to the perfect consistency works great for recipes and saves my jars!

    Ooh I spotted british baked beans on your table! At least that's what it looked like! We love baked beans in the UK and the best way to eat them is on buttered toast, but I cook my beans down more on the stove so that the sauce is nice and thick and tasty! Hope you enjoyed them xxx

    Happy New Year.
    I love soups. My mom used to make a beef vegetable soup when we had leftover roast. She almost always added barley. Not sure if you have ever cooked with barley. It makes for a very hearty soup.

    I found your pantry channel just before the end of 2023 and I decided to join you on this challenge. I inventoried my pantry as I had already inventoried my freezers and have a list. I separated some items that I've had either in my pantry or freezer for some time. We started our New Year eating leftovers from our Holiday meal which was just 2 days before the New Year. Thank you for sharing your meal plan with us. You have a beautiful family.

    Missed you last week! I know you were spending time with your family, and I'm glad you had that opportunity, but I missed you just the same. I was happy to see how long sourdough starter can stay in the refrigerator, other videos I've seen talk about how many weeks it will last, and I knew I'd never use it that often so I've never made it. Now that I know it can last for months, that puts a whole different spin on it. I have seeds in the pantry, and bought sprouting screens, so I'm looking forward to your next video for ways to use them besides just tossing some into a salad. The warmer/dryer winter has been such a blessing, hasn't it?! But that's begun to change here, and sounds like it's going to change even more in the coming month. Stay warm & safe!

    Good morning!
    I have missed your videos! I guess I’m addicted to what you share and am always so inspired by you. I’m so glad that you intentionally took time to be with your family.
    Now, because of you, I’m doing the Pantry Challenge this year. No stores until January. I over compensated during 2020 and have a gluttony of items I wouldn’t normally purchase so I’m glad to use those up. It’s just hubby and I. We try to stay on a keto diet which has done well but some of the items I have, don’t fit that lifestyle. I can’t afford to just throw it away. This make me go through those items and then purchase better items In February.

    I have been starting my pantry, freezer challenge too. I just made some chocolate coconut clusters. Cooking up a Chicken we raised last fall along with stuffing and cranberries I put up. 🙌👍 Thanks For your motivation . Blessings to you and your family.

    We also started the pantry challenges!!! My husband isn’t on board with not spending any $$ for two months 😂😂😂. He’s banned from going to the grocery store for milk and bread. I make my own bread and full fat milk which he seems to be enjoying just fine!! Stopped going out for junk food after any appointments and we just aren’t goi g out to eat at all for a couple of months. We could really go longer and may, we’ll see how he survives. So far he’s loving all the home cooked meals. This is so much fun!!! Thanks so much for the. Challenge!!!!

    Happy New Year and welcome back! The week between Christmas and New Year’s Day was always our family vacation time, too. My HH was a USPS clerk and often work 12-14 hours every day in December and it was a great time to reconnect.
    That is exactly how I hoped you would use the pumpkin liquid. I keep a soup container in the freezer and any bits and dabs of leftovers and the liquid from savory home canned foods go into the soup container, when it’s full, it’s a soup dinner night. When the kids were home, I used separate containers for each meat: chicken, beef and pork. I wasn’t sure how the combined meats would work together in the same soup but it really adds depth and variety. So tasty - and quick!
