is the lemon juice optional if I want to end up with a blue jam? or is it necessary to the flavor/texture of the jam? also I live in an urban area so would I be able to make this out of dried wild violets or do they have to be fresh?

I think lemon juice is optional because of the high sugar content, but I add it to all my floral jellies.
