Ingredients
(4 Buns)
(A) Dough:-
1. 150g( 1 & 1/4 cup ) Bread flour
2. 18g ( 1 & 1/2 tbsp ) Caster sugar
3. 2g ( 1/2 tsp - lesser ) Salt
4. 8g ( 1 tbsp ) Milk powder
5. 2g ( 1/2 tsp full ) Instant dried yeast
6. 100ml ( 1/3 + 1/8 cup ) Warm milk
7. 15g ( 1 tbsp ) Soften butter
(B) Butter Fillings:-
1. 40g ( 2 + 1/2 tbsp - lesser ) Soften butter
2. 20g ( 1 & 1/2 tbsp full ) Caster sugar
(C) Topping:-
1. 40g ( 2 + 1/2 tbsp - lesser ) Soften butter
2. 35g ( 3 tbsp - lesser) Caster sugar
3. 1 Egg yolk + 1/2 Egg white
4. 40g ( 1/3 cup ) All purpose flour
5. 2g ( 1 & 1/2 tsp ) Instant coffee powder
6. 2 tsp Hot water
Bake in a preheated 175°C ~ 185°C oven for 15 minutes.
Baking time & temperature may vary depending on the type and accuracy of oven. You may need to adjust your oven temperature accordingly.
Made these and turned out pretty good!!! We devoured the buns in one sitting. YUM
Tip: If you live in an area where the climate is hotter, you can cut back on water ( 2 tsp --> 1 OR 1 & 1/2 tsp ) to avoid the topping from being runny

Kimi i just made this, omitted the milk powder, it turned out great, soft buttery delicious and the outer has a nicer crusty texture from other recipes (except I didn't seal one properly and the butter oozed out ) I might try with more sugar for the casing next time. Thanks thanks

Yes,this is a delicious bun which I love so much but dear Kimiya why does this happen when I put walnuts on top of d pastry ( d walnuts can't stay on top of d buns but instead all spread to the bottom of d buns) I hope u can reply me. Tqvm 🥰

These are originally from Malaysia called Rotiboy. I have no idea either why suddenly it became known as Mexican coffee buns. So you are right if you have never seen such a bun in Mexico. :)

I just did this yesterday and it turned out great! I opted to just put unsalted butter for the filling instead of adding sugar so it was not too sweet (better for those with sugar conscious family). Machine Kneading time was more than 10 mins for me. Maybe because I didn’t allow the dough to rest first before kneading. My butter filling also spilled out of the dough while baking, but the dough absorbed it when I was letting it cool down. So spilled butter filling was still ok :)
Question: can I just double the recipe so I can make more? The recipe provided only yields 4, but I want to make more.. proofing takes time so i don’t think it’s advisable to recreate another batch just to make a lot.

I tried this it didnt rise well and i made the mistake of leaving the sealed part up instead of facing down so the buns only grew a little and the butter filling spilled out still tasted good but the topping tasted eggy... I will keep trying till i have some perfect buns

Try sealing the butter with dough first then put it inside the dough..in that case..doubled wrap.it wont spilled..promise🤗👌

I tried this recipe twice and the taste was superb! But I have a question- my coffee layer on top melts really quickly when I bake it, so it does not form a thick crust- just a thin one. Any trick to keep it from melting so quickly? Thanks in advance!
hi alisha chin, may be you could add a bit more of flour (1tsp) into the coffee topping, hope this will help thicken a bit the mixture and prevent it from melting to fast. Happy baking always 😊💕
