    explain please why you have used baking powder?

      Baking powder, in addition to salt, draw the moisture out of the turkey while helping to keep air pockets underneath the skin thus making it crispier. The turkey also looks full and moist at that

    Isn't this alot of salt ? especially for someone who can't have salt ? Can alot less salt be used ?

      Hi, I found this is just the right amount for such a large piece of meat. You will need that many to completely rub all over its skin, air pockets and both cavities. Of course, you can reduce the amount of salt, though it would take longer in brine time.
