What I love most about your playthrough, in comparison to all the other's that I watch and I do watch a lot, is that you both only breed the villager's but you also build those gorgeous open villages and leave them roam around instead of locking all of them up in a small corner

I haven’t looked into it myself, but I faced the same villager problems. From what I’ve been told all platforms have this issue. When you reload a chunk there’s a random chance the villagers will yeet themselves into the oblivion (they teleport).
I had a very similar world I decided to use creative in since I had every farm, all I had left to do was build up my village. It broke me having to spend all my time getting my villagers and animals back.

to prevent villagers from running away into the ocean you need to place more beds around,they don't see your main island as a village therefore they run away recklessly trying to find a bed,if that doesn't solve it then try to break and replace beds,they might be bugged.
We have 231 beds around town we are good lol
