Every anthropometric and body composition technique is flawed in different ways. They all simply give an estimate of health risk. BMI is likely the easiest and therefore most well researched. It's also reasonably accurate for most people. Especially those who do not do significant amounts of exercise, which is most people.

There are several text books out their with various health and fitness assessments including anthropometric assessments (e.g., Exercise Physiology Laboratory Manual by Beam and Adams).
