You can stack solar panels on top of each other

There is a script that uses gyros to aim at the sun, without a sub-grid, but you would need to have significant thrust in all directions. The extra thrusters would compromise your weight restrictions and put you back in the add more solar panels loop. Even if you could overcome the thrust/weight/energy ratio, it wouldn't help you in this instance since scripts aren't allowed on this server.
You're very on point there with the scripts! In fact, with rare exceptions, I try to keep all my video coverage as vanilla as possible so it's applicable to all servers, XBox players, etc.
