Thank you Sir. So far no one saw the it being a pellet cooker coming and I like that! I may have to look into adding extra probe ports. I just found out that the upper portion of the cooker has a brace in it that won't allow the probes to be routed over the 2nd rack. That might be the first mod!

Awesome I am trying to use it like I used my Traeger and not add the chips just yet. But with someone suggestion adding the chips almost daily I'm not sure how long I will be able to hold out.

Welp, that's something I will have to try out to see how it works. But I can tell you that it held pretty close to 200 for 8 hours while I was curing the paint. It fluctuated at most 15 low and under 10 high from 200 over the course of 8 hours. I was very impressed, to say the least.

Well seeing as how I usually cook to order I'd need to have a large order of ribs before I can see how many racks it can hold. But hang tight and stay tuned seems almost anything is possible!

No matter how you do it. Hopefully. Your next video could show what advantages you perceive to get with this method.
Sigh... reverse flow is not a technique. The smoker has baffling built in to reverse the flow of the heat and smoke. Liken it to an Automatic vs a Manual car they both will bet you from a to be but the difference is in the guts of the transmission. Same with a reverse flow, internally it is different. If you'd like me to post a link for more info please let me know. Or just do a simple search for Offset vs reverse flow and you'll find all the info. What I feel I will gain from not using a "tried and true method" is convenience. I am always up for a challenge and and cooking with a wood burning smoker is just that. BUT, the ability to save time and energy when I am cooking to make a profit trumps my need to keep things tried and true. Different strokes for different folks, my man. I am taking this opportunity to try something new and be a trendsetter with this big cabinet to help others who may come along and only have pellets as an option. *Passes you a beer* I like this and I like you. I like the way you think, you're right it's not as easily said as going from A to B but I was trying to simplify it. So in a nutshell the convenience of the pellet cooker and capacity were the main factors, in the change. I still have the wood burning smokers for when I absolutely have to have a wood fired cook, and need more capacity than my Vertical Charcoal/wood burning smoker or this new Pellet Cabinet can provide. Another reason that I haven't mentioned as of late is that my wood burning smoker is rusted out and on it's last leg. This video is 3 years old now and the smoker is holding on by a wish and a prayer. ua-cam.com/video/MOS3Qdyzthk/v-deo.html I have used that cooker a handful of times in 3 years because of the extra attention needed to use that cooker at the present time. When I was given my pellet smoker by my wife for Christmas years ago I swore I'd never use it for customer cooks. I've lost a LOT of sleep doing BBQ over the years and I'm over loosing sleep if I don't have to. Pellets are also cheaper which would help to increase my profits. Lastly, it would take a very discerning palate to be able to tell the difference, real talk.

I own the 20x42 lsg pellet smoker and freaking love it. Use a mix of wood chips and pellets and no one can tell the difference from my offset.

The extra price for this is going to come in with the additional cooking space and the controller, IMHO. So far I'd say worth it.

Can you use wood chips on this smoker? If so. Does it have to be a 50/50 mixture of pellets to chips or can you run it straight with chips only?
I know that it can be run with a combo, not sure about straight chips though.

I bought meat hooks off of Amazon and use the meat rods to hang ribs and ham
NICE! I have always laid my ribs down when cooking. Don't know how and or if I will use the hanging bars just yet.
