    I've watched and tried so many ways of making ramen eggs. But when I tried this it was the best, most simple, most perfect and easiest to peel of them all.

    I've never seen anyone cook an egg like this, but it seemed to work very well. Actually, it was easier to peel my eggs when I cooked them like this. Looking forward to trying these in 2 days with my tonkotsu ramen!

    I did mine like how you did yours. The sulfur taste and smell was gone. It was better than before. Not bad for a basic recipe 👍

    thankyou for sharing.. this is great recipe... after I have eggs in ziplock back and almost all sealed.. I put bag/eggs back in water back and submerge to push all the air out and almost vacuum seal the eggs in there....

    Using a shallow pan with a little bit of water is much better than immersing the entire egg in a pot of boiling water. I also tried the method of making a small hole in the egg but the egg white either all spilled out of the egg cracked. I must have wasted 8 eggs trying that method. Yours is the best so far.

    Just tried this recipe, this is really the easiest way to get an easy to peel egg, and the eggs turned out to be perfect. Perhaps those who have a bland tastebuds like me should lessen the soy sauce/add water/add mirin because it was slightly salty for me after marinating for 5 hrs. Will continue to use this method of cooking ramen eggs for sure

    Q: Do I need to leave the eggs to room temperature first or cold out of the fridge?
    I made different mix for sauce, adding konbu and bonito flakes and boil the sauce, let it cool, strain it then it's ready to marinate the eggs 👍

    1. Do I have to keep it in fridge? Or room temperature is ok?
    2. What do I do with leftover curing water?
    3. How long it last for the curing before it's became stale, both on room temperature and fridge

      1. In the fridge
      2. Discard. You could use it twice but it’ll be diluted with the moisture of the eggs.
      3. Depends on how seasoned you want to make it. I normally do overnight in the fridge.

    Hi it looks delicious but I’m just wondering… Can you do like variations in the marinade? I thought I remembered some friends telling me they put green onion in there or maybe some sesame oil… Have you ever tried different variations? I’m thinking that might be more regional…? By the way your yolk looked just absolutely perfect! I’ve never seen that method of cracking the bottom of the egg a little bit ahead of time I’m going to try it. Thank you!

    Just curious, what does the cracking of the eggs do and how much cracking do we do, visible cracked lines without leakage out? Also, for the marinade, dont we need to shake or stir all the contents first to dissolve the sugar before pouring on to the eggs?

      To make it easier to remove the shell, just a small cracks to air inside can escape. Time will dissolve the marinade 😉.

    Tip: dip the zip lock in a bowl of water up to the rim to get a full vacuum before closing it :)

      It’s normal 😉. The seasonings bring out the moisture from eggs.

      It does actually but very subtle. If you don’t like it, you just need to cook the sauce before you dip the eggs.

    Just tried this! I cooked 6 eggs but half of them "exploded" (the side touching the pan cracked open and the egg leaked out) and I followed the cooking instructions exactly. Do you know what could've caused this? On the bright side, I really like how simple the marinade is and that we only need to use a tiny bit of ingredients to prevent waste. I will try this again in the future, hopefully the eggs won't explode next time 😉Thanks for the recipe!

I turned the heat down to medium so I'll try it at the lowest setting next time. 😊 Also, I just ate one of the eggs (that didn't explode) tonight and it was delicious! I was worried that I overcooked it but it was still super soft with a slightly runny yolk. The marinade was great and wasn't too salty. I can't wait to eat the rest hehe ♥

    How long can it be kept for in the fridge? Also, can it be kept outside for around 6 hrs after taking it out from the fridge as I’m planning to put it in my lunchbox.

      3 days or so in the fridge😉. As these are half cooked, it’s not safe to put in a lunch box.

    I'm a little confused, when u crack the egg 🥚 has it already been cooked? I'm wondering how the yok didn't leak 🤔. Apologies for my ignorance

      No it’s not cooked. There is a hard shell and thin film-like thing underneath the hard shell. You just want to make small crack on the hard shell. The crack should be very small, almost invisible otherwise egg will come out.

      No. mirin and vinegar are different. You can just skip mirin.

      Normal pot is just fine😊. You are steam-cooking it so you don’t need much water.

      It’s called Johakuto, unique to Japan. Very similar to caster sugar.

    Ah you didn’t add water to marinade. Maybe that’s the way to intensify taste. I’m gonna try this method

      It’s chance to be experimental 🤩. Worcestershire sauce, bbq sauce, any sauce you have in your fridge and play with it !

      @MrBroxMan, same case here. Everytime I make 5-6 eggs, they are gone fast (I can eat 2 a day myself, so I end up boil another batch of eggs. Hubby wonders why eggs at home are gone so fast when he wants to make scrambled eggs and whatnot for breakfast 🤣
