Looks great. If you want to add a bit of crispiness, besides making sure that you pat the wings extra dry, add some baking powder to the mix and toss. It works best tossed naked, but still works when tossed altogether.

Thank you for all your recipes on this grill. Because of you, I went out and purchased one. My first attempt was these wings. The process was exactly as you demonstrated. Through experience, I never use the BBQ rubs. I find less is more and usually go with simple salt and pepper. The way I made these: I used a little over 3 lbs of drummets and wings. They were already thawed. About 21-24 pieces I used a mixture of baking POWDER and cornstarch as a coating. (1tsp of each for every pound of meat) I mixed four teaspoons of each in a separate bowl. You can add a pinch of salt and pepper. Mix thoroughly. Pat wings dry and place in a bowl. Make sure the skin on the wings is covering the meat and not pulled back. Add the flour mixture and mix the wings by hand to coat. Place an air fry basket in the smoker. Add Pecan pellets to the hopper. Select the air crisp mode. Press the wood fire button. Set temp to 400 degrees for 25 minutes. Let the grill go through the ignition and preheat process. (about 5-7 minutes) Place wings skin side up in the basket. Close the lid and smoke/air fry for 10 minutes-open the lid. Flip and cook for another 10 minutes-open the lid. Flip and cook for 5 minutes. They were awesome by themselves. Otherwise, coat in your favorite sauce. *one of the advantages of not using a rub is the fact that they will not darken as much during the air fry process. (usually because of the sugar in the rub)

I do smoked wings at the same temp and time. They come out perfectly but I do them on the grill pan, not the air crisper basket. We love them. So good.

My little trick is to run the air fryer at a really low temp for like 10 minutes to dry the skin before I spray with oil and then crank up the temp to cook. Works really well when you don't have time to dry them overnight
Just made these for the third time, which was the charm. Got 40 wings from Wild Fork, plus their smoked pecan rub and Firecracker rub. Vrined the wings for 12 hours. Shook em with flour and baking soda. Let sit another 2 hours. Then coated them in the two rubs and sprayed em with avacado oil. Air fry smoked em at 390 for 32 minutes. Let em cool and then drizzled honey on em. Phenomenal, crispy Hot Pecan Honey wings.

While I've pretty much got the hang of it now, I'm still finding out new techniques and finding your tips very useful (like using the avocado oil spray during air-frying). I'm actually doing my first wings today on the air fry setting (they're grilling as I write), thus will be part of my lunch. Keep doing what you do.

LOL! Yeah, pretty much any BBQ rubs you can get ahold of will work on the recipes. I know you guys are getting more and more out there. Keep trying new rubs, it's a fun part of the process.

For crispy wings, the wings need to be as dry as possible. Use baking powder (else you can use baking soda), and skip the oil. Also, put the wings exposed in the fridge for a hour so that the wing can resorb any liquid that will be drawn out when the rub/seasoning is added.

This may seem like a dumb question, CJ, but after 10 minutes, when you turn the chicken wings at the halfway point, is there a way to pause the timer, while you are turning the wings, so that you get the full 20 minutes of closed lid cooking time?
@@ronaldroberts4058 The taste must be weird asf with baking soda tho. I would use flour or corn flour instead without using panko. Still crispy but no need to hide any flavour.
I just finished devowering them but I had to fight my wife for them. I just wish the grill was a little bit bigger and next time not so much smoke otherwise they were a 10

Do you let the wings come to room temp, or do you cook them straight out of the fridge?
I give them some time to sweat in the seasoning, but I don’t stress how long they’re out of the fridge to get on the cooker.

Thanks! I think I over sprayed it a bit. Usually it helps with the crisping.
The duck fat reduces evaporation of water keeping the wings rubbery. Try 'em dry - no spray.
Try corn starch and baking soda with no spice. They will crisp up nice. Then toss them in a light sauce before serving.

Have you tried the directions in the manual? It says 390 degrees for 40-50 minutes. That seems like overkill.
I throw their manuals out. They’re trash. That’s why I write the ecookbooks for it.
I could never get my wings crispy in just the air fryer. Airfry + smoke worked.
