    Thank you for this. Can you teach us how to make swiss meringue buttercream . And also the difference between swiss and Italian meringue buttercream.

      Swiss and Italian are almost identical, only difference is the technique used, but the result will be pretty much the same product :)

    How do you make the gum glue? I can’t wait to try. It has been an art I’ve always admired and in awe of.

      you can just use water if you’d like! I like to mix 1/8tsp CMC with 45g boiled and cooled water. shake it, leave overnight in the fridge and use the next day.

    Hi!
    I made your gumpaste and today I tried my hand at spray roses. While they don’t look like yours, I’m hopeful practice will help me get better. My question for you is regarding curling the edges with a toothpick. Regardless of how thin or thick I made the petals, when I went to roll the petals they chipped a little. I do t think I was working too slowly, and I kept everything covered...any advice? Otherwise, I love the way it feels when I worked with it. 💗

      Hi Lisa, thanks for giving it a try and absolutely, practice will make all the difference! Hmm I think the only thing that would make them crack would be them drying. When you cover your petals try putting a damp towel over the plastic wrap so they're sealed in well, and work with only 1 at a time just to be sure they stay moist.

      Doesn't matter! But I have a Kitchenaid attachment so it's electric. Just makes working a lot faster and easier.

    Hi .I made your gum paste recipe but mine turned out sticky and very soft .do you know why .followed your recipe as it's written

      2 things could be the issue: 1. was your gelatin fully dissolved? If you see little specks of gelatin in the gumpaste that's the problem. 2. could be the brand of cmc/gum trag used. Try kneading in 1/4tsp CMC, allowing the mixture to mature for 15 min and see if it improves. You can add in as much as you need to, just keep a note for next time!
