Irish Stout Full Brew Day and Recipe (Unsour Guinness Clone)

  • This is a take on my unsoured Guinness clone (I can't stand the 3% soured beer they add to Guinness) using the ingredients I just happen to have when the stay at home order went into effect. I'm calling this one 'Get Dem Snakes Out'. It turned out a bit stronger than it should have (seems my boil was a bit extra vigorous) but it's been getting rave reviews. It's got a lovely roast character and is super drinkable.
    I brewed this the day before St. Patrick's day and somehow still have one can left so look out for the review in a few days!
    By the way this was before the shut down got super serious in LA, so hense the lack of masks (we did wash our hands a ton, but that's just a good practice when you're making food anyway). *Equipment links below!

    I love the recipe - mainly because it omits the use of Roasted Barley and Black Patent Malt. I never quite understood how people could like the taste of freshly brewed ashtray that these malts impart. I always substitute equal amounts of Carafa II or III for those ingredients because tradition is no good reason to perpetuating misery.
    I also like your choice of mash temperature. I think big and/or complex beers benefit from a good beta amylase rest. I was a little surprised to find out that the finished beer didn't have a lot of body (as you explained in the subsequent video). You put a lot of dextrin malts, and one would think that they would add more body and mouthfeel. But if it was a success, then more power to you.

      I love the subtleness of Carafa III I'm not sure into the smokiness of the dark malts like you mentioned. I's always a really light dry stout low abv low body, drinkable.

      I don't use Black Patent Malt in My Dry Stouts but always use Roasted Barley and Flaked Barley and I enjoy the flavor I get from them and it surly doesn't taste like an ashtray. "Was that Irish Whiskey you ended up drinking Flora! Cheers!🍺

    I like how you display your brewing equipment in the beginning. Finally read the description and thanks for posting the links. I’m keen on getting the Clawhammer starter system and building on it. Looks like you upgraded your pump.

      Yeah! The pump is the Blichmann Riptide. The only reason I upgraded was that I wanted a new toy! I still have the clawhammer pump and it works great.

    I really like how simple your brew days are! Definitely way simpler than mine. E.g. you do not sparge! What's your design system efficiency? How much time does a brew day take for you? (from milling to cleaning). Enjoy Patrick's day!!

      Its supposed to be around 70% or so I think. I used to sprage but the efficiency was the same so I just keep my grain milled fine and it's all good. It's around 6 hrs with the electric system but I can get it down to 4 if I'm cranking a burner.

    Question: Do you like the 2 roller MM? Do you need to grind twice to get your crush fine enough? Don't have a mill yet but with the coronapocolypse going on I'm thinking about it. (Also, please mind your hair near the drill!)

    Do you need the kettle on the stove? Seems like a struggle to get the grain basket out. Maybe there's some sort of shorter stand it could sit on

      This is an older video...I actually just got a burner that makes it way easier (but not for the electric system obviously) The reason it's on the stove is mainly for camera angle, I don't really have anywhere else in my apt that I can do it until I install a water line in my spare bedroom ;)

      I love it but would recommend getting the 240V system if you're able to speed up brew days

      As a Grainfather user (for over a year now) - if those are the two you're looking at, go Clawhammer 240v. The Grainfather is great if you really want bluetooth connectivity and semi-automation when paired with the app. As far as brew-ability, the new Clawhammer setup is awesome. Great BIAB type system, the included pump is a lot better than the Grainfather, so is the chiller.
