I'm an American that loves Italian coffee and one of the reasons I invested in quality espresso equipment it's because I can't find real Italian coffee in the United States. It all seems to be about double shots at a two-to-one ratio. The reality is this is not ideal. So as a purist I was wondering if you could do a segment on a traditional espresso and ristretto. I much enjoyed watching you dial in the grind and comparing the 14 vs 18 gram baskets. Certainly, dialing in the grind takes patience and a willingness to "waste" some shots. I have a Silvia V.3 that I purchased in Europe and brought here to Brazil. I've installed a PID on it. That black model of yours is nice; I didn't know they come in that color. I also have the Rancilio Rocky direct dose grinder. My beans come from a friend who has a coffee farm here in this state and roasts and delivers to me weekly. My tap water is filtered through a ceramic gravity filter, and I have another filter in the Silvia's tank. I agree with you that the Silvia's drip tray is way too small. I've ended up using a Tupperware 2" deep tray that remains on top of the machine's drip tray screen and is easy to empty. This means I don't have to constantly check the level in the machine's drip tray. I also have a "naked" portafilter for the Silvia, which allows me to use a "triple" 24g basket as well as verify how the water is flowing through the basket, verify my tamp to avoid channeling, etc. What do you think about "naked" portafilters? Where can I upgrade to improve my shots? I suspect I should invest in a better grinder.
I’m using different kinds of coffee beans from Starbucks to Illy to Lavazza to Hair bender to kopi luwak. And now I’m trying nicoletti, I had three to four hours playing with my machine when I bought it, but when I got the right grind size,I never adjust the grinder of my breville barista touch. I always get the perfect shot.

Loved the machine, but i quickly realized I wanted more. A month after i ordered a gaggia classic paired with sette 30 and have been loving the pair since. I would love to know more about your niche zero how you got it ( process of acquiring one) and your experience usage and maintaining etc. Thanks to you and your wife for all the hard work keep the plastic on and thanks again to you and your wife.
@@HoonsCoffee probably weak spring still. The Silvia springs are different than the commercial springs as they are much less tight. They make thousands on thousands of those springs in Italy at one time and Rancilio USA will get them in huge batches I'm sure there are some that will loose thier thighness in the shipping and or manufacturing process. If you replace it get a commercial spring it will fit your Silvia portafilter and you will never have that issue if anything you will have the opposite problem. It will take some work to remove it. Joking about you will never have that problem even commercial portafilter springs need to be replaced after a while of use. FYI you may know this but if ever your basket is stuck or hard to get out use the backside of another portafilter basket to pry it out. There is also a little pry tool too since you like little gadgets and such. I've been digging your videos although if I'm honest I can't see them every day but your humbleness and calming attitude is refreshing. Keep up the great work.
Hi Hoon, Love the channel, have picked up a few helpful tips to date but struggling at the moment. My burr is at 4 and Grind at 7. I have 18g with an output of 40.1g at 27 seconds but the needle goes to 1 showing as over extracted. Any ideas please at what I should be doing next?
Forget about the guage. It's just this side of useless and is not needed. The only real determination of over or under extraction is taste How do your shots taste ?
Gary, if it's a dark roast, try the lowest temp on the machine. Your dose may be ok, however maybe consider a short pour, may 1:1.5 or 1:1.7. The dark roast coffees are much easier to extract than medium and especially light roasted coffees. By lowering the brew temp and shortening the pour, you'll be getting less extraction. Generally one can use a higher dose of dark roast coffee than of medium and light roasted ones

The basket falls out usually because the filter spring is weak and you need a new spring. They need to be replaced from time to time anyways. ;-)

you went way of 28 grams for the 14g basket, I think number 9 would have been the number you were after with that particular roast.
Tap water is terrible, Spring water is better as it doe not have too much Ions in the water, If you live in a hard water area thats a disaster.
