Being 100% Italian descent, I make Carbonara all the time, but I don't like the taste of either guancihale or pancetta in it so I use bacon. In addition, whether it's correct or not, like you, I can't imagine any Italian dish without onion and garlic.

If you put onion and garlic in it it is not pasta Carbonara I make pasta with garlic onion and bacon parma and egg all the time its lovely but it not carbonara. And the is OK....

I come from a big I Italian family never put garlic or onions in are carbana in fact growing up we call it bacon and egg pasta

I grew up in Va and you mentioned Wegmans. I miss Wegmans 😭 they don’t have them down here in Texas. Never thought I’d miss a grocery store so bad.
My mother worked for the first Wegmans store in Rochester (a long, long, long time ago).
