    can i use lemon instead of vinegar?

      Yes, but the amount of lemon juice might vary depending on your lemon's. Also, I don't think you can do a one-to-one substitution but need a bit more lemon juice. I did it once, but I can't remember the proportions. You can probably find an answer if you Google it.
