Yeah, it's all my dear mum used to do, 2 tablespoons of plain icing sugar, and a 2 teaspoons of water or lemon juice. It's not royal icing by the way, that's too hard. No but here's some advice on it. Castor sugar has more finely ground crystals than granulated sugar, which means it dissolves faster than granulated sugar in creamed mixtures and whips. So grinding granulated sugar down will give you castor sugar. 👍

I noticed you put the tray into the oven on a low shelf. I don't have a fan assisted oven so should I do the same?

Mmmmm, delicious, I love the methodical way that you work in your kitchen, I am learning each time, can butter cream icing be replaced with royal icing, John? I get a really bad heartburn from butter anything.
Yeah, it's all my dear mum used to do, 2 tablespoons of plain icing sugar, and a 2 teaspoons of water or lemon juice. It's not royal icing by the way, that's too hard. Love your videos John, i work in a school kitchen making about 500 cakes and puddings a day and i find no matter what i do there is always a bit in the bottom of mixer that doesnt get mixed in, i make 6lb of sponge mix at a time any tips would be most welcome x

John, isn't it best to crack your eggs into a seperate container first just in case you get a bad one which would mean you having to throw all that mixture away.?... or did you plop them in a bowl of water before hand to see if they floated or sank ;) I've fallen foul of that before now.

Britain is the geographical term that is England, Scotland and Wales. United Kingdom is England, Scotland, Wales and Northern Ireland. So UK is more the political terminology identifying the 4 land masses. We seem to use the term ‘UK’ more nowadays because we have our lovely World Wide Web and UA-cam. We communicate with folks all over the world and we all have different measurements for all sorts of things, hence UK and USA ounces and cups, crochet terms are UK or USA.
I've often wondered the same. I think it might have been as computers became more common and they used UK on address fields. Could be wrong though

@Ronald Devine.....I don't know, but it could also,be like in the USA. When I was growing up, one never heard American TV announcers refer to the USA as "America". Back then there were only 3 main national USA tv channels ABC, CBS, and NBC....and I don't recall them calling the USA "america" as they now almost always do instead of saying the USA.

No but here's some advice on it. Castor sugar has more finely ground crystals than granulated sugar, which means it dissolves faster than granulated sugar in creamed mixtures and whips.
So grinding granulated sugar down will give you castor sugar. 👍
