Welcome back to the Barba canal! today super Christmas video, sweater, tree, dressing up the house, because I want to talk to you about this which is a home-made leavening cell, total cost 50 euros maximum, but in my opinion we definitely need it so as not to remain slaves to the rising times either whether we make bread whether we make pizza, whether we use mother yeast, whether we use dry or fresh yeast, because naturally in winter the temperatures are different in the various houses, there is no heat, using the fridge is a bit more complicated because when we remove the dough from the fridge we don't have the necessary heat, so we struggle, we put the dough near the radiator, near the stove, near the fire, but the temperatures are not never check. So in my opinion to have a good leavening result we need this leavening chamber. In fact, a uniform temperature is created in the leavening cell and this is fundamental for leavening, which must be done correctly at a temperature between 26 and maximum 30 degrees, it should not be done at 40 degrees as there could be close to a stove or oven or near a radiator. The temperature must be constant and controlled between 26 and 30 degrees (I recommend this leavening not ripening). Let's go now to see in detail what you need for the construction of this low cost levitation chamber and then I will tell you a couple of precautions that in my opinion are very very important. What do we need to build it? Simply one of those boxes that are found in every homeware store, you decide the size, then we need a thermostat, which is this, I leave you the link in the description of what I bought, but you can find a thousand of them.
