  • Kuih Bahulu is egg sponge cake baked using bahulu mould which is made from either brass or aluminium. This recipe uses 12-holes starfruit bahulu mould (acuan bahulu belimbing), which yields about 60 pieces of bahulu cakes.

    I tried this recipe and it really taste very delicious! Make sure the oven and the mold is hot enough or the cake will stick to the pan. You can purchase the mold from pasar Malam as well!

    For coating of the moulds, do we use cooking oil or butter? Also, can we omit putting the mixing bowl in warm water?

      I use cooking oil to coat the mould. Beating egg over warm water will shortening the time for it to become stiff. Without warm water, it take much more longer. If the egg is not stiff enough, it will deflate quickly when other ingredients are folded in.

      I bought the new one from Taobao.

      It is an old Panasonic microwave cum convection oven, more than 10 years. No need to add baking powder, make sure the egg mixture is beaten until very stiff, keep batter in piping bag will help preventing the batter deflating fast.

      Put into piping bag and seal the bag, just leave at room temperature.

      Ada beberapa sebab ia melekat, tepung tak cukup, acuan tak cukup panas atau batter not well mixed. Panas acuan pada 210°C, pernah panas pada 200°C masih tak cukup panas.

      If the mould is not hot enough, bahulu will stick to the pan terribly.

      I bought from bakery supplies shop, you may find it online too from Shopee or Lazada, search for "bahulu mould".

    After first batch, we don't need to brush the mould again with oil?

      I just brush once, before preheating the mould to 210°C. I noticed that it won't stick if the mould is hot enough and the batter is well prepared (flour added to egg mixture must be adequate). Previously I used 200°C and it will still slightly stick.

      You may try using the same temperature and reduce the baking time.

      This recipe not so sweet then I dun have to reduce the Something of sugar. Thinking of making tomorrow, hope the kueh will turn out soft and not hard cos I make a few such recipe but all turn out to be hard. So disappointed

      Make sure the egg mixture is whisked until very stiff before folding in other ingredients carefully. The recipe use some cornstarch to replace plain flour which yield a softer texture bahulu.       I whisk the mixture for 12-15 minutes, but still not white in colour, is a bit light yellow, why? So I stop whisking. That’s why the kueh bbahulu turn hard

      Do you whisk the egg mixture over warm water bath as shown in the video? It will shorten the time for it to become stiff. Without water bath, it will take much longer for it to get to that state.

    Why my Kuih bahulu turn mouldy after 1 week.

      This is not the very sweet version, it won't last very long, I usually finish with 2-3 days.

    This is more like madeleines. kueh bahulu don’t have added fats. It looks nice but it is definitely not Kueh Bahulu

      I didn't. This is less sweet version and it is soft when cooled. I did saw other recipes which use more sugar to yield crispy crust do fry the flour.

      I never tried the crispy version as it is too sweet for me, you may need to double the sugar I think.
