Menu for me this week-Saturday homemade sausage & mushroom pizza, Sunday pork loin au gratin potatoes garlic green beans, Monday open faced hot roast beef sandwich with wet fries & carrots, Tuesday chicken veg rice casserole, Wed spaghetti & meatballs & homemade garlic bread, Thursday homemade chicken soup, Friday hamburger pattie & baked beans. I'm a widow but when I cook I cook big. I get 6-8 meals from each one. I eat 1 and put the rest in single servings in the freezer. I always have 4-6 different meals ready so its easy and I get variety and I can stay in budget.
I’ve been batch cooking and meal planning today. Tonight is baked cod. Saturday is homemade pizza. Sunday is Swiss Steak. Monday is Beef Vegetable soup and homemade no-knead bread. Tuesday is Chicken & Spinach pasta bake. Wednesday is burritos. Thursday is Dump Chicken & Broccoli & Rice casserole. Friday is good old tuna casserole. The Chicken/ spinach bake, burritos, and tuna casserole are already in the freezer ready to thaw and bake. The rest are super easy crockpot and dump meals. I think I’ll make that coffee cake for Sunday! My husband will love it.

Our meal plan is Beef noodle bowl with baby bok choy and egg, Tortellini in tomato soup with garlic bread, Beef Chili for game day and Polish Kielbassa with cabbage, carrots and potatoes, I still haven't quite figured out a plan for the chicken breast but I'm sure it will be something yummy. Even if its not listed in the recipe, I like to add 1 tsp of vanilla extract to any sweet recipe. Gives depth to the flavor. I even add it to boxed cake mix if I am short on time
Love this time of year! Some upcoming meals for the week: lasagna soup, terriyaki tofu & broccoli over rice, turkey burgers and Dover sole. Lots of items in each recipe come from the pantry, freezer and what I’ve canned and put up. It is so fun to cook a healthy, tasty, frugal meal!
I live in Central NY, so the scenery is about the same. We had some beautiful maple trees last week, red and orange. So pretty. Planning to make stuffed pepper soup this week.

Right now I have 12 baked potatoes in the oven , I am making shepards pie twice baked potatoes with 6 of them the others I will use for leftovers , you can top them with any bits of leftovers , chili , bar b que pork , vegies and cheese . Delightful! Our local commercial greenhouse is ' clearing out" the bargains are unreal. Last year they gave my cousin such a big load of cabbages he had to learn to make sauerkraut.
My favorite season, Fall has come to SE WA state. I changed the thermostat from OFF to 68 degrees a few days ago. It’s time for my favorite meal, homemade bean soup.
I can't wait to see your tulips and path in the spring! We are having sloppy Joe's, salmon or tuna, a frozen puzza. I will be gone for work, and DH will lhave eftovers in the freezer or pasta.
Did my shopping today for the week. I have the grandchildren for a few meals as it is our half term next week. I have the meals planned. Salmon , crushed garlic potatoes and kale, roast chicken with roast potatoes and veg on Sunday. Teriyaki chicken with cauliflower rice and veg Monday. Sausages, mashed potatoes and broccoli, homemade fish and chips and peas are just some of the planned meals. Our clocks go back tomorrow night so our dark nights have arrived. Our meal plan for the week includes chicken dumpling soup, meatloaf and perogies, spaghetti, tostados, venison burgers with home grown potatoes/fries, pizza, and finally, Turnaround Thursday where we go back (or turn around) and have a smorgasbord of all the bits of leftovers from the week!

I have been trying out new soup recipes. I made a Butternut squash and cheese tortellini soup that was very good. Next, I'm going to make a Chicken Cordon Bleu soup. Thanks for all the effort you guys put into to making great videos!
My mother in law would make her cookies and freeze then till Christmas eve when we had Christmas at her house . Oh did I enough her date pinwheel cookies. Me and my husband would fight for the last one.lol she loved when I cane into the family because I would cook more cookies too give her a break. And everyone loved a change of extra cookies.
Leah: I live in Alberta, on the Alberta/ BC border, close to Mile 0 of the Alaska hwy. There's a special culture up here in the north that's different from the rest of Canada and US. It's Fall and Thanksgiving season ( Officially a full weekend in October) . And we have gardens and field crops harvested September until it snows (usually around Halloween), and then we start decorating for Christmas when the snow comes and have big Christmas craft markets starting in October. August to December is so much fun and full of so much fall and Christmas celebrations. Worth the experience if you ever get the chance.

Yeast freezes beautifully. I've successfully used yeast that had been frozen over a decade. Don't even thaw the yeast before I use it!
I just love your pink mixer! It reminds me of my grandmother’s 1960’s pink Sunbeam mixer! Her whole house was green and pink!
