    I love how you pushed through to show us how you can cook with food you grow, I can tell it was a little uncomfortable for you but GIRL YOU ROCKED!!! Lol. Everybody does things differently and I'm glad you worked up enough nerve to show us how you do. I thought I was weird for not measuring when I cooked, I go by smell, looks and taste and it always turns out great no matter what I'm cooking or baking! I just wanted to say GREAT JOB!!!!

      I always using my hands lol it's so much easier than using utensils (except hot lol). I just wash them constantly

    I'm Jamaican and I love okra steamed with cabbage, carrots, and broccoli. I also love it with steamed fish.

      If you have a food dehydrator, cut them in little chunks and you can season them with just a little salt or other fun seasonings, and keep them in a jar to snack on. That's fantastic. Of course, steamed, fried, and GUMBO are wonderfully delicious.

      Same here but my daughters who insists on measuring everything always ask "how much". My answer is always the same...i don't know...untill it tastes good to you!

    Also, okra is what makes gumbo have its magical thickness!!!!! And pickled okra is a cheat sheet for tasting heaven early!

    I was growing 8 okra till I realized 5 of them were actually weeds...that's the second time I've grown weeds thinking they were something else 😂😳😂

    I’ve always been blessed with kids who will eat almost anything. My husband however, could live on bacon and coffee so hiding things in his food became a sport of sorts 😂

    I LOVE watching a fellow country girl in the kitchen take a floured hand across her pants! Takes me back to my mom's kitchen as a little kid. Country moms rock! ^_^
    Two things I learned frying chicken... One wet hand, one flour hand.... keeps your fingers from gunking up when you're in the kitchen frying pounds of food.
    And cooking Asian food....I learned that using corn starch in batters lightens them up and makes them REALLY crispy! I add corn starch now instead of flour. Try it! I love it, especially on fish.
    I love love love your cooking videos! I'm trying so hard to get more out of my garden, and you're my inspiration. Out of all the youtubers...your garden is just what I aspire to have. PLEASE don't stop making these...

    Random Thoughts: 1) I've worked with some of the greatest chefs in the world. They ALL say home cooking is the best. I have no doubt they'd ALL love your food. 2) I'm pretty squeamish and wince when I see people touching my food. However, I have ZERO problem with one person -- the actual cook -- cooking with her/his hands. After all, hands are the most useful tool in the kitchen. 3) Everyone who knows about food knows that simple is ALWAYS best. You should never feel the need to apologize for cooking that way. The greats always prefer true, simple, honest ingredients and combinations. That is the best way to actually taste the ingredients. 4) Your recommendation to taste the food and decide for yourself what it needs is the #1 most important way to become a great cook.Sure sometimes mistakes are made, but nothing beats tasting and deciding for yourself. 5) I've never tasted okra. Thanks to your video I have a sense of ways to explore it. For that I am very grateful. Thanks!

    Last year okra was my "try something new" veggie. Loved it! I had so much of it, though. I finally dehydrated it in little chunks. I throw a handful or two in soups and found it to be so yummy.

      You’re my hero. Totally have a dehydrator and didn’t even think about using it for new veggies I’ve grown but was worried about not using it all. Especially since I want to try okra. Have totally had dried okra as a snack and now I’m way too excited. Lol

      Some people dehydrate and grind them, adding the powder to soups.

    I used to hate okra. Now I love it. Being married to a Southerner eventually brought me around. One of the best garden veggies.

    My okra is just starting to produce well here in central Illinois...usually we just go the fried route, but I think roasted will be on the menu soon! With the breaded okra that ends up in my freezer, we've found that we can bake it in a 425 degree oven for about 20 minutes with a spritz of oil on it and get almost the same crispiness as frying delivers.

Patrick is managing to grow year round in his backyard and has a whole lot of useful information on his channel. He's been a huge inspiration for me over the last couple of years.

    Oh this makes me homesick. My husband and I moved our little family out to the Pacific Northwest after a lifetime of living in Oklahoma. Watching this video, I realize that's the one thing I miss the most.. Me and my little honyocks picking okra from our "okra trees" in the garden out back, bringing them inside and rinsing them, slicing them up, and giggling in the kicthen while we waited on the okra to finish frying. By the time I had finished frying the last of the batch, they were always already gone. Those were the days. Cherish these memories you're making with that beautoful family of yours. God has blessed you so wonderfully.
    As a sidenote, here in Washington state I have been to seven different farmer's markets (and every retail/home & garden/hardware store within a 50 mile radius), and NOT ONCE have I come across okra, or okra seeds, or anyone who's even heard of okra -- let alone fried okra -- before. Pretty ureal thing to discover. I'm like, wait a minute.. Y'all really don't know what okra is? That's when I realized we're not in -Kansas- Oklahoma anymore.
    Thanks for having the courage to cook for us. It truly blessed my day.

    I know you said you don’t like it, but I have often wondered what you do with many of the things you grow! I am southern, have always grown the usual southern stuff. You inspire me to branch out! Having said that, there’s a ton of stuff that I would love to see you cook and show us how to preserve!!!! Sometimes, even just to see the inside, textures, and the descriptions of tastes. It helps me decide if I want to deal with trying something different. Like, I am not sure y’all have enough to do over there...more of this too please 😂 thanks a million for all the inspiration!!!!

    I’ve never had a pleasant experience with okra. I’m a small-town southeast Missouri girl. It’s always been slimy or mushy or just generally gross. My husband-a born and bred Arkansan-insisted that we grow it this year. Fingers crossed we can change my mind!

      Have you tried pickled okra? It's my favorite way to eat it, not mushy and most of the slime isn't present!

      you need to fry it a little bit in olive oil, just stir fry it and the slime is gone. I love it with beef as a stew... its absolutely one of my fave veggies ever.

      I have found adding a spoonful of cornstarch to the flour mixture makes it really crispy.

    Okra was my favorite vegetable growing up. My mom made spicy 🌶 pickled okra last year and it was absolutely to die for.

    I love okra stew fried - a little water and a little olive oil. my new favorite way is to grill it. I put it whole in a bowl, drizzle a little olive oil with garlic salt. stir to coat and then just grill. it is so good

      it does take about 45 - 55 minutes to get rid of the slime though.

    My daughter has autism and she would not eat vegetable because of the texture. I snuck tons of vegetables in her food and also put large pieces on the side of her plate. People told me not to waste the food but today she loves all vegetables.

    I'd never heard of it until a year ago and I've never met a person in my country who has. I've been itching to plant some, but no nursery sells the seeds and no company ships to my country. I live in Africa, but far south and it's just not a thing here. I came across some seeds in a nursery that was hella expensive. But I got it and they're ready to plant out in about two weeks. Cant wait!

      @@marthaperkins7531 I've read that is one of the theories. But honestly in the part where I live, we've never heard of it. And this is not one of the countries where slave trade took place. It probably originated in one of the more lush places...not many things grow well naturally in my country. And no one ships to here, so I cant order from anyone😭

      @@FebbieG absolutely horrible 🤣I got one single fruit from 10 plants. my climate is too unpredictable for okra.the sea dew and cold mornings did not agree with it....just when I thought I got them to get some hight and a few flowers, our winter storms started. Our winters are mild, but we get terrible heat/sand storms that rage in from the desert. One day it's cool, the next its 48° and the wind rips out my pumpkins. I'll have to save up for a greenhouse or at least a cover roof, maybe I'll try again then.

    Great video! Thank you. As a British ex-pat, transplanted to Texas, okra was alien to me. I now grow it and fry it in very shallow coconut oil, coated with almond flour, paprika, cayenne, garlic powder, onion powder, and salt. Yummy! Will definitely try roasting it.

    Normal to my household, too. All my life. Last week I fried some garden-picked okra after rolling it in cornmeal. I made fresh purple-hull peas, too. I like okra with fried chicken or pork chops. Even better with chicken and dumplings. (Sorry, I must be hungry.) We enjoy fried okra like one craves popcorn. Didn't realize there were so many varieties. Thanks for the info, Jess!

      One way is to make fritters , cut into strips , make a spice mix with chickpea flour , turmeric , red chilli powder , cumin powder , chat masala and salt . Toss cut strips in the spice mix and a quick fry in hot oil , yum yummm😊.
      We add it to our lentil and vege soup ( sambar ) which is spicy , sour ( with tamarind) and sweet ( with jaggery) , perfectly balanced .

      That's because it is the only thing that can be farmed in our summer season. Fried okra in yoghurt is simply lip smacking.

    I'm growing 7 okra plants in a large container in Las Vegas. It's super hot here and they are thriving. I wish I'd had sown more. Easiest plant I've ever grown and I love them raw.

    Grandma used to cut up okra and add corn, jalapenos etc and then she mixed flour and corn meal with salt and then fried it...mmmm. So, I make that sometimes...but mostly I fry it. It is not slimy when you fry it either. I've never baked it before. Enjoyed your video as I do most of them . Thank you for sharing.

    I totally understand why you don't like cooking videos. I'm so spontaneous in the kitchen, trying to explain my process is impossible. With that being said, I so appreciate you taking the time! Because I should have my first ever okra soon!!

    Your hands are your best tool. Grew up in Beaumont, California eating okra. Family originally from Oklahoma. Love you tile. I have the same tile in my kitchen.

    I just found your channel. I’m so glad I did! I can’t wait to watch more. This is my second year of having a garden. Last year was 1 box and now our back porch is full. I’m hooked. I always thought I had a black thumb. Last year for Mother’s Day I asked my hubby for a garden. I found you tonight looking up okra. I got my first flowers today and they are so pretty.

    I love adding okra to a frittata with zucchini, bacon, red capsicum and crumbled feta. We are lucky enough to grow okra as a perennial in the tropical north of Australia

    I’m from Louisiana, I grow okra every year . We eat it smothered down . One trick to cut the slime down is to slow roast it for 1 1/2 ( you can freeze after or continue on to smother it with onions, bell pepper , garlic , sausage and chicken stock..... oven roasted , dehydrated (nice snack food) , fried , gumbo , a variety of stews and pickled . You can freeze enough okra for the winter and it’s a southern tradition because It’s a prolific producer with a long lasting growing season .

      I love oven roasted okra ! Olive oil salt and pepper is how I bake it. Gets nice and crispy like a chip.

    Hi Jess ! Great video! I cook the exact same way... and I think it's great. Hands are sometimes, the BEST tool, and it does not need to be complicated or fancy to be delicious. It also adds a bit of love that will never accompany factory-made food. Fried okra was a food that I craved as a toddler (in Texas, of course ;) and I haven't had it in a while due to moving up to the northeast... and your video just brought it all back. thank you !!!!! tons of love from PA ...and keep teaching cooking as blissfully simplistic as possible.       I'm a NZer too but moved to the southwestern US and okra has been my favorite garden discovery here!! I would be interested to know how well it grows in NZ because we only plant it when the soil temp is around 90, so it is usually the last thing I put in the ground.
      It's a beautiful plant!!

    I love okra, of course fried is the best😂. I finally tried raw okra this year and it's a great snack while working in the garden especially when okra is just beginning to produce. I'm hoping my okra picks up enough to pickle some since I remember it as something my grandmother did who is my inspiration

    I know this video is a year old, but I thought I'd still add my 2 cents! I like to chop okra into small rounds and fry with a tiny amount of oil together with onion, garlic, red peppers thinly sliced and a small amount of chilli flakes. Once nice and soft just pile between two slices of buttered bread. Simple and delicious. My mum would prepare okra as a side dish like this. By the time we'd all snuck a bit in a slice of bread there would be hardly any left to go with the meal!

    I love that you roasted it! I had SO MUCH last year I didn’t know what else to do after pickling, frying and freezing. Screw it, let’s roast it and see how it turns out happened, it was absolutely delicious and now our favorite way to eat it. Now, I try to roast everything I grow just to see how it turns out. 😂

    I like to literally just grill them whole. No salt, no spice, no oil. There’s usually residual oil on the grill. Also, I leave about an inch of the stem. It’s a convenient handle. I find grilled okra doesn’t have much of any sliminess. I might be weird, I love the flavor. The simpler the better for me. Super jealous of your yields.

    I love to roast some okra then cook with canned diced tomatoes. My youngest child would eat fried okra like most people eat popcorn as his evening snack.

I usually buy it when it’s in season and stew it with peppers, onion, kale & tomatoes which all come from my garden so I decided I might as well grow the okra too!😊 I love your laid back style of cooking which is how I usually roll in the kitchen as well…thanks again!!

    I Jess I love okra too this is my first year growing okra I only have 6 plants but like you said going to the garden and eat fresh okra is the best I love the way you did too I will love to get so seeds from you from all the other varieties I only have the green okra thank you for this awesome video God bless you 🌹🌻

    Jess I love watching your kitchen videos! I know you don't like making them much because you don't measure and your kitchen is 'a mess' but those are the reasons I love these so much! Its real life, like showing how weeds grow in the garden sometimes, or cucumbers get hidden and escape harvest at their prime! And I also rarely measure my tried and true recipes, but its so nice to see you cook like I do, I absolutely love your harvest cooking almost guideline-like videos ❤
