Ah..food looks delicious. I noticed the banana leaf was dry. Usually, the restaurants would wash the banana leaf before they place it. But it may be dry or some may have not been washed. So, it is always customary to just splash a little bit(a small scoop)of water on the leaf before they serve the food by ourselves, then just wipe it with my hands (which have been washed earlier before we sit to eat) slowly without tearing it and then the food is placed on the leaf. It's just a bit safer. Sambar is the first one served would not be spicy...usually. The dark and thick one(kara kolambhu, would be spicy). For biriyani always a lassy drink(yougurt drink) would be good to reduce the spiciness. Also, you can get refills on sambhar,veggies and buttermilk. In some, you can even get refills of rice(they call unlimited meals)

How to eat a South Indian meal? (To whomsoever it may concern) Here is how you need to eat a South Indian meal. Remember these are not hard and fast rules for outsiders. As a foreigner who is unfamiliar with the culture you are allowed to eat whatever way you want. A South Indian meal, especially in Tamil Nādu (and Kerela) must contain six different tastes (Sweet, Savory, Tangy, Spicy, Salty, and bitter). That’s how a South India meal that was about twenty years ago. But not anymore, unfortunately. But that is the general rule. Here are the steps, 1. Wash your hands thoroughly before eating. 2. Sprinkle some water on the banana leaf and wash it. You can spill the washed water on the floor. It is allowed. 3. Do not dump all the rice on the banana leaf. It must be split into four small portions and put the first portion on the leaf. 4. The server will put some “Paruppu Podi” (lentil powder) and ghee on top of it. Mix it well and eat that portion first. Ghee is supposed to open your throat which will help you swallow the food easily. You can start with the sweet if you want. 5. Eat the next portion with Sambar. 6. You are not supposed to mix the vegetables (Kootu and Porial) with the rice or eat them all at once. It must be consumed in small portions along with the rice. 7. The next portion of the rice is supposed to be eaten with “Rasam” which will help you to digest the food. The servers will be roaming around with containers of “Rasam”, and you must call them. In some hotels, they just give you Rasam in small containers like vegetables. 8. The fourth portion of the rice should be consumed with either buttermilk or yogurt along with Pickle aka Achaar. That’s about it. Always remember to fold the banana leaf towards you to finish the meal (just fold the top portion towards you to close the banana leaf). This is an indication that you are very satisfied with the meal. If you do it the other way, then it means you are unhappy. Just keep that in mind. Water should not be consumed before or during the meal unless it is necessary. Drink as much water as you can only after the meal. Again, these were the hard and fast rules for the natives once upon a time. Not anymore. However, it is up to you to follow. It is not compulsory. Did you like the veg meal overall? Chappati comes with special meals. Normally we will not eat chappati. Regular meal covers 1. sambar 2. Kara kozambu 3. Rasam 4. More kozhambu And some poriyal, kootu, pappad, sweet, pickle will come along with the meal.
