  • Recipe for Chicken Mandi:
    Ingredients:
    *For the Chicken:*
    1 kg chicken (cut into 8 large pieces)
    1 kg long-grain rice
    *Whole Spices:*
    6 small green cardamom (choti elaichi)
    2 large cardamom (bari elaichi)
    2-inch piece of cinnamon (daal chini)
    1 piece of nutmeg (javitri)
    10 cloves (laung)
    1 tsp cumin seeds (jeera)
    1 tsp fennel seeds (sauf)
    1 tsp coriander seeds (dhaniya)
    1 tsp Kashmiri red chili powder
    Salt to taste
    1 tbsp garlic paste
    Juice of 2 lemons
    50 gm cashews and almonds (for garnishing)
    10 strands saffron
    Mustard oil
    *For the Sauce:*
    2 green chilies
    1 tomato
    1 lemon
    Fresh coriander (dhaniya patti)
    Instructions:
    1. *Prepare the Marinate:*
    Grind all the whole spices (choti elaichi, bari elaichi, daal chini, javitri, laung, jeera, sauf, dhaniya) into a fine powder.
    In a bowl, combine the ground spices, Kashmiri red chili powder, garlic paste, salt, and lemon juice. Mix well.
    Coat the chicken pieces with the marinate and let it sit in the refrigerator overnight.
    2. *Prepare the Saffron Water:*
    Soak the saffron strands in a small bowl of warm water and set aside.
    3. *Cook the Chicken:*
    Heat mustard oil in a large pan over high heat.
    Add the marinated chicken and cook until browned on all sides. Once cooked, remove from the pan and set aside.
    4. *Prepare the Rice:*
    In the same pan, add more oil if needed and sauté chopped onions and green chilies until they are golden brown.
    Add the marinated spices and chopped tomatoes. Cook until the tomatoes soften and the mixture is fragrant.
    Pour in 2 liters of water and bring to a boil.
    Once boiling, add the soaked rice and cook until the rice is almost done (about 70%).
    5. *Combine Chicken and Rice:*
    Layer the cooked chicken over the rice.
    Drizzle the saffron water over the top, sprinkle fresh coriander, and cover the pot.
    Reduce the heat to low and let it steam for about 5 minutes.
    6. *Prepare the Garnish:*
    In a small pan, lightly fry cashews and almonds until golden brown.
    7. *Prepare the Sauce:*
    Blend together green chilies, tomato, lemon juice, and fresh coriander until smooth. Adjust seasoning as needed.
    8. *Serve:*
    Serve the Chicken Mandi hot, garnished with fried dry fruits and fresh coriander.
    Accompany with the prepared sauce on the side.
