@@chefknivesenthusiast holy that's a lineup and a half. I looove your Fredrik handle Tetsujin Labo. I must have missed the 150mm petty post but I'm sure that's another wicked piece.
You got Tetsujin? Oh boy that’s awesome. You should do a compromise, whatever doesn’t get sold in x days can then be purchased by employees. They’ll be praying to the gods of knives to not have them sold.
Recently received a myojin riki gyuto. Dang.. the grind is so precise. The chamfer on the spine and choil.. sheesh.. so even and symmetrical, and this is viewed using a magnifier (my eyesight is not great). I am convinced he put the chamfers there just to send a message that he has total control over the sharpening process. Looking to pick up more knives sharpened by myojin.
Glad you liked it. I 100% agree with the perks of manual focus, particularly with photography. But things move so quick with these visits and I only get one shot that it’s worth taking the risk with properly positioned AF points as opposed to MF as my angles, distanced and subject matter is always on the go. I’ve kept the creeping and breathing focus frames in the video to juxtapose that element of rawness.
My Tetsujin Blue#2 Gyuto has become on of my absolute favorite knives. Truly a fantastic knife for anyone to have in their collection. I also have a Myojin Riki Seisakusho that I love. One day I'll get my hands on a Konosuke FM! Thanks for sharing, this was pretty cool to see!
Thanks for showing this, I'm a admirer of the single bevel grinds by Myojin-san senior and the double bevel grinds of Myojin-san and the smithing skill of Tamura-san are second to none. I currently have a single bevel gyoto blue 2 by the senior Myojin-san which is one of my favourite knives but I'm looking to expansion my collection knives ground by both father and son as they bring the life out of the bladeTamura-san has created.👍✌️⚒️
IF you have a Tetsujin Labo knife yourself or one sharpened by Myojin-san, I would love to know which knife or knives you own and what you think!
I own a Tetsujin Metal Flow Gyuto 210mm with Fredrik Spōre handle. A Nakagawa x Myojin Kiritsuke 240mm and a Myojin Petty 150mm. Stellar blades!

We just got some Tetsujin in stock… hopefully they won’t all go to employees. 😂 Great footage, Franco!

My pleasure
Thanks for the tour! so cool to see old world craftsmen at work, keeping age old traditions alive. One suggestion, use manual focus on that nice lens!

I too love my Kiritsuke Gyuto blue #2. The Riki is very nice.
Great to have video after seeing pictures of their wonderful work!
Thanks Grant.
Some very cool techniques
Both masters at a young age in their crafts.

That’s an absolutely beautiful story. So awesome that you have one from senior Myojin-san.
