    I made this, and used scrambled eggs cooked in butter, until they were dry (aside from the butterfat) and used heavy whipping cream, because I had no coconut cream. I added a tablespoon and a half of instant coffee to the other ingredients, and used Dutch cocoa powder, and maybe a smidge more than the original recipe required. Blended in the vitamix. Let me tell ya… it was AMAZING, even… EVEN before chilling! It was rich and creamy and filling! Yes, yes YES!

    I just made this with my assistant, my 4-yr-old grandson, and we are sworn to secrecy about the main ingredient. The older ones wouldn't touch it if they knew, but this little guy does not care. "Everything we make tastes good, Gramma "

      I skip the cinnamon and add in 1 tbsp of instant coffee to mine. It really steps up the game!!

    I've been making this for about a year, but I soft scramble the eggs instead of hard boiling. Quicker and far less smelly. Love it!

    Make it with warm eggs, it blends so much easier. Also try adding 1tsp peppermint extract (omit cinnamon ) for chocolate mint.

    I'm a huge Maria Emmerich fan and love her recipes! I've been eating the pudding for years and tweaking the flavors and it's always good. And you can freeze it for a cold treat, too!

      @@sanaghafoor84 add almond extract to it, along with a tiny bit of coconut extract to amp up the coconut milk flavor and you've got almond joy pudding. Add banana extract along with almond extract and you've got the same flavor as those frozen bananas from the ice cream truck from years past. Add sugar free peanut butter powder with the cocoa powder and resees peanut butter cup flavor. Possibilities are endless with all the extracts out there

      @@Defensewhiz thanks a lot. Great suggestions. Today i made it using scrambled eggs. Instead of cinnamon i put coffee powder. Added a scoop of casein protein powder to amp up protein which made it a little too thick so had to add more coconut milk. It tasted amazing even before chilling it. This is going to be a staple in my house for sure. Now if only i could find a good replacement for sour cream onion chips (like Pringles) my snack needs would be sorted!! 🤭

      @@sanaghafoor84 Yeah it's really cool to change the pudding up. I've been making it for about 7 years from when I first found out about this. Originally the recipe was on Maria's blog, which I saved it from, then it was off her blog for a good many years and recently returned as a free recipe maybe 3 years ago. Her snickerdoodle one is part of her PSMF deal so there's that too. For sour cream and onion chips, use the cottage cheese viral hack to make the chips and either top them with scallion and boost up the seasonings or make this pudding without sweetener and add dill weed, scallions and onion powder. and dip pork rinds into the dip itself, or do a sour cream dip. Many ways to hack that

    I love her recipe!!
    I’m not a fan of cinnamon in this so I skip it and add in 1 tbsp of instant coffee!
    It always comes out great! Reminds me of tiramisu with the added coffee!

    A tip to you for shelling boiled eggs. I've noticed (being on a number of Keto FB groups) that everyone and their duck has their "tried and true" method for peeling boiled eggs. I've tried them all, believe me. None are going to work all of the time. So here is my answer and it absolutely DOES work 100% of the time once you get the hang of it. Get yourself a cheap spoon. I mean, really cheap. The metal should be quite then, and the bowl of the spoon should be similarly curved as your egg. Doesn't need to be perfect, just kinda close. Now, take your boiled egg and start peeling it from the large end as there's usually a pocket of air there. If your egg isn't peeling properly, you slip that spoon between the shell and the egg and peel that thing like magic. This does take practice, and your egg will usually be a little rough on the outside rather than nice and smooth, but you'll get the shell off with a whole egg for your trouble. I frankly hate peeling eggs, but this has made it much easier.

    So I’ve been cooking for 50 years, and just RECENTLY by watching chef’s boiling eggs, I have successfully learned that putting my even very fresh pasture raised eggs into boiling water instead of cold water made ALL the difference! I usually take them out of the fridge so they aren’t cold when I put them into the boiling water. Also, don’t overcook them! I think 11 minutes then into a real ice bath. They peel sooo easily! After 50 years!
    Try it! And they don’t stink!

    I have a Ninja blender also. I went to 2krazyketos version of Maria’s pudding. I soft scrambled 12 eggs, I used water for the liquid. Keto chow for the flavoring and then I added1/2 tsp of beef gelatin and 2tsp of vanilla and 1/2 tsp of liquid stevia. It taste great warm, I have it chilling in the fridge now. Absolutely NO egg smell or taste

    I have found if you use one of those electric egg cookers that steam the eggs to hard boiled they are always perfect and super easy to peel. It makes a tedious task short work and a great way to prep deviled eggs.

    Yes, the pot-in-pot egg loaf is great for lots of eggs in a pressure cooker! If you need to do a traditional in-shell hard boil, cook the eggs on the trivet at high pressure for 4 minutes, natural release for 4 minutes followed by quick release & an ice bath for 5 minutes. Rap the fat end of the egg on the counter, turn it on its side & roll on the counter. Peel from the fat end under a slow to medium stream of water & the shells just about jump off. 😊

      I use thisoldgal's method of hard boiling in a pressure cooker. 2 min., 5 min nr, then quick. Put themnin a sink of cold water. Instead of rolling on the counter, I just do it between my hands. The eggs peel in one piec most of the time and VERY quickly

    I've also heard that some just scrambled liquid egg whites and then make the pudding for an easy lower fat version for PSMF.

    I really love your videos. Have been watching for years and your dislike of egg smell is about the same as mine. Your humor always makes me laugh and I think poot has become one of my favorites since you used it in some eggy bread battle eons ago.
