You need:
- 4 eggs 🥚
- 4 slices of bread
- Herbs of your choice (we used lovage, basil, chives, parsley) 🌿
- A few tomatoes 🍅
- 1 onion
- Scattered cheese (as much as you want 🤤)
- Edible mushrooms of your choice 🍄 (we brought fresh chanterelles from the forest 😋)
- Olive oil
- Butter
First fry 4 slices of bread in olive oil. Then we cut the onion into small pieces. We then put these in a pan with butter and fry them briefly (1-2 minutes). Then add the mushrooms to the pan. Add tomatoes to the pan and fry briefly.
Cut fresh herbs into small pieces; these will be added to the egg later and can be used for decoration at the end.
Break 4 eggs into a bowl and season with salt and pepper. Add the herbs and beat the eggs.
Add the eggs to the pan and fry over medium-low heat. Remove the eggs from the edges when they set.
As soon as it becomes firm (slightly brown) at the bottom, we put cheese on one half 🤤.
Now we can fold it over and fry it briefly over low heat so that the cheese melts nicely inside. Now turn it over and add a little more cheese on top if necessary. After about 1 minute, the omelette can be removed from the pan.
Serve and enjoy 👩🍳

Chanterelles are one of my favorite mushrooms and they are very tasty and easy to prepare. 👍🏼
