    Just ran into this video, and it warms my heart: it reminds me of the sweet and hospitable family I used to work with. I moved away from Glendale and I dream about this bread from time to time. I used to go the DMV get my wait number and immediately walk across the street to eat Jingalov and Lahmajoun.

    Carrot leaves have more vitamins and nutrition than carrots and we used to call it GAZRUK witch is wild carrots. Arrugula is vercion of wild mustard leaves . I'm a foragger and we used to forrage all the herbs . Thank you Heghine jan

    Sweet Lilit thank you for recommending ketchup, my American husband enjoyed it. He’s never eaten herbs, so this was the only way I got him to eat Jingalov hats. Who would have thought that was the secret. Of course for myself I simply added a small slice of butter and even dash of lemon and it was perfect. Thank you Heghineh!!! I watched all three of your videos and picked up on things here and there and can’t believe how good it came out.
    I made it on a round cast iron skillet and divided the dough into smaller rolls in order to roll it out very thin and fit in the skillet. Thank you for giving me the confidence to try it myself :) Still can’t believe how well it turned out. Will be making it for my grandma next week. You’re cooking show is my top favorite to watch (Heghineh, David Chang, Samin Nosrat, Chefs Table). You’re way up there ;)

    Wonderful video. Makes me want to try and make this brand-new (for me) dish! One thing I wish had been included was to give the total weight of all the greens and herbs. It's clear that this recipe can handle some variation. But it would be good to know, for this amount of dough, to buy (for example), 3 lbs of fillings, or 2 lbs of fillings, or 5 lbs of fillings...or whatever the approx amount is supposed to be.

    Some food vloggers on occasion go back to their home countries, and vlog about the native food and culture over there. Hearing about opening the Jingalov Hats season in Armenia made me nostalgic (even though I am not Armenian) because I identify with such food customs where all the women come together to make elaborate dishes in my culture as well. Don't know if you guys ever visit Armenia, but would really LOVE to see you on a few food assignments from Armenia...

      This is made with herbs only and preferably with vegetable oil.
      Yes you can freeze ready breads for weeks.

    I have been thinking of the name of this bread & I come to understand the word Jingal which in Farsi means անտառ=wood, which make sense too, as all these green herbs make you think of wood=անտառ,......I am happy to have found the meaning of this bread (y)

    This looks yummy but what could you substitute for young garlic green, where I live it’s not available. Also could you put goat cheese in the before grilling that seems like it would be so good. Love your show.

    You should take family to Armenia for simple loving visit and make sure to add the bling they are used fun for them there, they do not understand how it was when we were younger for spoil we do?! I said it to my father like this. We should want a better life for our children than we have had for ourselves. One more thing, home is home lovely ladies!

    Love your videos! My father is Armenian from Syria. My mother is Lebanese. This video reminded me of the fun times I had cooking and baking with my mom. My dad too. We make a Lebanese version of Jonalov Hats with Swiss chard, Perslane leaves, onions and sumac as filling. Bless you and your lovely family.
