That is the difference between original pizza and what lots of us call pizza today. Original pizza was as much about the base pastry as it was about what was on top. Where as today, lots of us look as the base as nothing more than a medium to hold all the toppings.
It is like that around the world. The French invented Puff Pastry and the early dishes made out of puff pastry, the pastry was supposed to be the star, but now the pastry is just a medium for what it contains or comes with. The same as the Greeks and filo pastry even though it was invented in Turkey . We take a lot for granted these days, and are not as impressed anymore.
I would happily eat the base on its own. I only have cheese on my pizza and no sauce. I used to work at Pizza Hut here in New Zealand and at the close of business the boss let us make a pizza with the leftovers and I always took home a base with nothing on it.

I'm glad they have English subtitles now on the pizza menu. I had pizza in Naples 30 years ago and a group of us didn't know any Italian language. All we could do is point to an item on the menu and got surprised with the result. Surprised at all the vegetables such as peas, potatoes, arctic chokes, and more on the pizza. A big change from American pizza.

Funny someone in America has had this experience there, but probably the best pizza I've ever eaten in my entire life is pizza con "crema di pistacchio" in Siracusa Sicily, my province. The pistachios were probably from Bronte in Catania Sicily, the best in all of Italy. To be honest though, it was girlfriend's pizza!!!
You traditionally cut the napoletan pizza in 4 pieces, you take the quarter, fold it, and if it drools fold the tip on the inside. Anyway great video as always man, you can feel the connection between you and the food through these.
Most of the people here in Italy eats with hands, I've never eaten with fork and knife because I literally don't know how should I eat with them and can't enjoy the pizza

This, and his metabolism. There's a good all you can eat japanese restaurant near me with a 3 hour limit... I'm always super full after about 2 hours while I want to try more and I have to keep it lean for a week afterwards to keep my weight somewhat under control.
Hi Mikey! Love your videos, just a couple of things from someone who has lived in italy: The first pizza you had in Rome looks like that not necessarily because Roman pizza is more casual. That kind of pizza is called "pizza al taglio" or sliced pizza. It has a thicker, focaccia like dough because it's meant to hold up as it's eaten on the go. You can find it all over Italy. Also, Italians not being restrictive with their toppings is not something characteristic only of pizza Romana. You'd be surprised what kind of toppings we have on our pizzas! Personally my favorite has potatoes, heavy cream and bacon. Much love
You dont have to eat it with fork and knive, cut it in pieces use your fingers to fold a V, that keeps it straight while you eat it. So you can always experience the right amount of dough, tomato, mozzarella, oil and basil

Somehow Mike continually comes up with novel, incredibly expressive ways to describe his food experience. Pizza in Italy made me appreciate a really good base, medium thin, with just 2 or 3 high quality ingredients. Fromaggi or Gorgonzola, prosciutto and basil is my fave. Perfect.
It's the heat of the oven and that it's wood-fired. I think so. Most soft mushy doughs are made by people who don't know you need to heat the crap out of dough to make pizza.

Also, pizza “purists” in Naples, despise pizza from Rome because it’s too crunchy and you can’t fold it (it would broke). They say that’s how you know if it’s a “real” pizza: if it’s real, it will fold.
This brings back memories! I visited Italy last year and had the best pizza in Naples at Pizzeria Brandi. It's supposedly where the Pizza Margherita was invented in 1889 for Queen Margherita. Sadly, it seems you didn't visit it this time around. That only makes for another trip! Also, you should visit Amalfi, they have the best fried anchovies & lemon gelato! It definitely won't disappoint!

I visited Rome and Naples with my husband this month and went to Pizza Florida because of your video. They were so good. I had to try the tuna pizza and it was my favorite. Delicious!!
Damn, I wish I heard about that last place when I was vacationing in Rome back in 2013. That pistachio-pesto pizza sounds absolutely divine. Maybe next time I travel there I'll check it out. I'd definitely love to go back to Italy in general.... it's my favorite European country thus far. The landscapes, the culture, the artwork/museums,... and yes, the food! I remember having a good share of authentic Italian pizza along with gelato on several occasions there and it was so damn tasty!
Sorry, not sorry, but I'll have Roman pizza over Neapolitan. I like it waaay more, and the diversity of toppings makes it even better. ALSO, FYI Rome has a special one called 'pinsa', which is the very last pizza that he had there: the dough is made with a mixture of flours, is 'taller' but is very much worth it.
Loveblanket From Toronto, NY take out slice and Brooklyn style pizza (ala Juliana's) is one of the top pizzas in the world. My Italian girlfriend from Torino agrees as well. Both are not a huge fan of Chicago Deep Dish, it's not really a pizza anymore and way too heavy. Just out opinions though.

It takes me back to 1991 in Barcelona,where I stumbled across an Italian owned shop,and I had my first tuna-topped pizza. I ate it every day for lunch for 2 weeks. The owners,who seriously like Mario and Luigi,ended up knowing me by name.

I made homemade pizza once with my dad and we spent 4 days watching tips on the best ways to make it and it was so so good. We tried to do it again but it wasn’t as good but we did kinda rush the second time.

I visited Rome and Naples with my husband this month and went to Pizza Florida because of your video. They were so good. I had to try the tuna pizza and it was my favorite. Delicious!!
Damn, I wish I heard about that last place when I was vacationing in Rome back in 2013. That pistachio-pesto pizza sounds absolutely divine. Maybe next time I travel there I'll check it out. I'd definitely love to go back to Italy in general.... it's my favorite European country thus far. The landscapes, the culture, the artwork/museums,... and yes, the food! I remember having a good share of authentic Italian pizza along with gelato on several occasions there and it was so damn tasty!

Sorry, not sorry, but I'll have Roman pizza over Neapolitan. I like it waaay more, and the diversity of toppings makes it even better. ALSO, FYI Rome has a special one called 'pinsa', which is the very last pizza that he had there: the dough is made with a mixture of flours, is 'taller' but is very much worth it.

Loveblanket From Toronto, NY take out slice and Brooklyn style pizza (ala Juliana's) is one of the top pizzas in the world. My Italian girlfriend from Torino agrees as well. Both are not a huge fan of Chicago Deep Dish, it's not really a pizza anymore and way too heavy. Just out opinions though.
