INGREDIENTS
1 egg
¾ cup cooked long-grain white rice, cooled
½ cup finely chopped herbs (a mix of chives, dill, parsley, and/ or tarragon), plus more for serving
6 tablespoons extra-virgin olive oil, plus more for drizzling
½ teaspoon ground turmeric
1¼ pounds ground beef, lamb, pork, or turkey (feel free to use a combination)
Kosher salt
1 yellow onion, thinly sliced
6 garlic cloves, thinly sliced
3 tablespoons tomato paste
1 teaspoon red pepper flakes
2 pints Sungold or cherry tomatoes
2 cups water

I just got back from two weeks in Ptown where I stayed with a friend who had Andy's book. It's visually beautiful, the recipes are great and his personality shines through. The meatball recipe - who doesn't love a great meatball? - especially caught my eye, so was thrilled to see this video. Well done all-around, Andy. And welcome back to the video game.

Mexicans have salted dried plums that are available at Latino markets. You'll find them in the candy section where the tamarind paste candy is located. I wonder if it would be a good substitute?
I came here for this comment! Saladitos are small dried, salted plums, sometimes they come in a brine, sometimes dry packed, and are usually spicy. As Andy was speaking about the Persian dried plums, I was thinking, Does he know about saladitos, bc they could be a great substitute. Definitely found in the candy section, more likely in the tempting displays right before checkout, in every Mexican market. Less likely to be found in Latino markets that don't cater, in part, to Mexican customers. They aren't usually found in other parts of Latinoamerica.

Barring the weird measurements in the recipe. This looks like a great dish I can't wait to try it.
Notes for future me:
This uses about 12oz of fresh cherry tomatoes or about 1 can of chopped tomatoes
Skip the apricots (it'll be too sweet)
Serve with salad and or rice/pitta for more carbs
I made this tonight. The recipe says to form the meatballs before starting the sauce, which meant total cooking time was closer to two hours.

I would try replacing the ground beef with very firm tofu crumbled and/or chopped cooked chickpeas. Furthermore, any cooked legume coarsely chopped could be used in lieu of the ground beef. Also, add 2 tablespoons water to 4 tablespoons ground flaxseed, and let sit for 5 minutes ~ will replace the egg. I am tomato intolerant. Any ideas for replacing the tomatoes?

@@josephsf2452 darling, I eat everything, except portobello mushrooms which cause me intense nausea, but in my late 60s I have discovered a few things that I don't tolerate as well as I did. Furthermore, I was answering a question about turning this recipe into a vegan (vegetarian) recipe. Then I reciprocally queried for my particular need which was to find a substitute for the tomatoes used in Andy's recipe for Kufteh. I am not vegan, and can tolerate all the other ingredients. I cannot tolerate dairy products, legumes, nor nuts and seeds, anymore. Therefore, I will try with a bechamel sauce, but omit butter and use coconut oil, or olive oil, omit milk/cream, and use beef, chicken, or vegetable stock to make a faux alfredo sauce without the parmesan, of course, because that's dairy. Kapeesh?
@@sheristewart3940 Thanks, I think I‘ll try it with lentils. You can try to substitute tomatoes with 2-3 pureed grilled red bell peppers and one small pureed grilled aubergine and add a little water or broth to it when pureeing, since both vegetables don‘t contain as much water as tomatoes do …
