It's called BOAT NOODLE SOUP because, in the olden days, this dish was sold in Thai wooden boats along the canal. You may not know this but there is beef or pork BLOOD in the soup stock. When I tell people there is blood in the stock, they usually get turned off or disgusted by it but as soon as they taste the broth, they think it's delicious and there is no taste of blood.
