  • Khmer calls it Cha Khoy Teil. It is one of my favorite stir-fried noodles as a kid and is still my favorite as an adult. You can cook the noodles with any kind of meat, but my favorite is with shrimps and crabs. The noodles are soaked in cold water for 30 min. and then cook in a hot wok with oil, garlic, and shallots. It is then mixed with a special sauce and tossing it with fresh green onions, cilantro, bean sprouts, and crushed roast peanut.

To haters who say Khmer are thieves and copy Thai.
From history books and documentaries, Thailand have been known to invade its neighboring countries such as Cambodia, Laos, and Burmese. From their victories, they took possession ancient artifacts, scriptures, jewelries, and many value goods. Not only that, it was also written that Cambodian Royal Ballet Dancers were held prisoners and forced to teach the dance to the Thai people. This was written in a French history book, translated in English at CSU Stanislaus. If you visit the Museum in San Francisco and Washington DC, you will see some Cambodian artifacts written in Khmer Writing displayed but when you read where it’s from, it said Thailand. So who steal from who and became rich?
Since Cambodia and Thailand are neighbors countries and have a long history of wars, the food, language, religion, and culture might have been copied, exchanged, shared, and influenced to one another. And because Cambodia was caught in a long civil war, the country was behind in technologies, economy, media, and tourist attractions, which limited exposure to the Westerners and the outside world and so not too many people know about Khmer food.
Thailand was not in any kind of civil war allowing tourists attractions to the country and eat Thai food, which in fact have very similarities or the same ingredients as Cambodia and Laos. Examples papaya, lemongrass, galangal, turmeric, garlic, kaffir lime leaf, chili, fish paste, and etc. So, it’s very unfair and bias to give all credit to Thai and say Khmer copied which at one point in history during the time of Alexander the Great, Khmer was a Great Empire with rich civilization and agricultural dominating and influencing most of Southeast Asia region in religion, culture, and food. So with that being said, who’s the original and who’s the copy? Does it really matter? Couldn’t we just appreciate and respect one another as individuals?

looks the name is based off the Hokkien 炒粿條 chhá kué tiâu that is popular in Malaysia and Singapore. The original version uses the wider rice noodles like those in pad see ew. They serve in a banana leaf. The name sounded so familiar. But this recipe for sure is like the yummy pad thai.
