Easy Eggless Semolina Cake Recipe

- Eggless Semolina Cake - I had the egg version last week so this week I would like to show you the eggless version. The recipe is super simple and easy as there are lots of ingredients we can’t get during this lockdown period, so I want to minimise the ingredients as much as possible. However, to begin with, you will obviously need semolina flour. The cake turned out so moist and soft, and I hope you’ll be inspired to try out this one. Enjoy!

Ingredients:
I am using 9x5x3-inch loaf pan
120g (3/4 cup) fine semolina flour
150ml (1/2 cup + 2 tbsp) whole milk
100g (3/4 cup) plain flour
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
113g (1/2 cup) unsalted butter, softened
150g (3/4 cup) fine sugar
1 tsp vanilla extract
Instructions:
1. Soak the semolina flour in the milk for about 30min - 1 hour, or while the time preparing for the next steps.
2. Sift the dry ingredients (plain flour, baking powder, baking soda, salt). Set aside.
3. In a large bowl, add the softened butter and sugar. Mix them until creamy, fluffy and pale.
4. Add vanilla extract. Mix until combined.
5. Add in the soaked semolina flour. Mix until combined.
6. Add in the sift ingredients in two batches. Fold in using a spatula to avoid over mixing. Add in the remaining dry ingredients. Fold in until combined.
7. Transfer to a prepared 9x5x3-inch loaf pan, greased and lined with parchment paper.
13. Bake in preheated oven at Bake in preheated oven at 180°C/355°F for about 35-40 min or until the inserted skewer comes out clean.
8. Cool the cake on a cooling rack. Slice when it’s cooled.
9. Cake is ready to serve.

one channel that makes most of the stuff eggless. Kudos to you Fiona. Thank you for being so thoughtful. it does help a lot of people who are allergic to eggs or prefer a veg diet. Not many have choices in baking due to the majority of stuff having eggs.

Love the video! I decreased the amount of sugar (like I almost always do) to 120gr sugar and it still turned out plenty sweet for my taste. I also added a layer of frozen berries. Super simple recipe without eggs and I really enjoyed the result. Thank you 👍

We tried your recipe. It turned out very well. The only change we made was in the quantity of sugar. We increased it to 170 gm. It was a perfect cake. Thanks for the recipe!

I like how you convert the gms to cups in your recipe making it easier for us instead of having to use the scale.There r some recipes where they show for eg. 3/4cups butter rather than in gms or oz.Its ok if the butter is melted to measure them in cups but not when its solid.

I did this recipe few days ago and i didn't quite liked the taste. After it cooled it had a weird smell to the cake even when i used good quality vanilla bean paste and extract. It turned out well but taste and smell wasn't great. Looking forward to seeing more eggless recipes. Tq
I had successfully made the halved recipe of the orange semolina cake. Thanks! I've altered that same recipe into eggless with lemon flavor, by using milk and lemon juice as liquid source , followed by drops yellow food coloring with 160 degree Celcius oven. It was moist melt in the mouth cake yet firm . Totally loved the orange semolina cake u shared.

Thank you. I have made it today. It's good, But little dry. So, i poured a condensed evaporated milk over the cake. It turned more soft and wet. may be i had left it in oven little longer! i have to mention that i used xylitol as sweetener instead of regular refined sugar.
oops, just now i noticed that i had used half amount of butter... :O
Hi fiona made this cake just now it was superb everyone loved it specially my 3 year old son ...however I baked this in cooker for 45 to 50 mins on slow flame.. it was classic. .

@@vandana5575 try it..keep the flame slow ..also preheat the cooker for 10 min without putting whistle before putting the batter. .enjoy...take care stay safe at home. .and stay bless. .

i do in similar manner, except i skip all the folding steps; i draw the base of the tin and then cut the sides as shown in the video.
I have tried this cake twice till now.. once following the recipe expertly and other time using my experimental brain.. I used oil instead of butter and skipped the part of beating the butter.. also used whole wheat flour and semolina, did not use all purpose flour. It came out awesome.. it only took 7 more minutes to cook but I am happy I could replace butter to oil and flour and still had such an awesome cake.. thanks a ton for recipes. 🙏❤

❤️STORAGE TIPS ❤️
1. You may keep in room temp on the first day. Refrigerate there after.
2. It will be hardened in fridge. Thus, bring it out in room temp for 30 min or more, depending on your room temp before consuming. It will be softened again
