Well, that's a step above using frozen burritos and pouring enchilada sauce over the top but it's still gringo wannabe enchiladas. Cook the burger, better yet, slow cook a beef chuck roast and shred it. Add a bit of RED CHILE SAUCE, preferably Las Palmas, to the meat, just enough to flavor and wet it. Set aside. Shred cheese, set aside. Pour the rest of your Las Palmas red Chile sauce (LOTS) into a pot and warm it on the stove. Heat a cast iron skillet and add lard. Fry CORN TORTILLAS, not flour, in the lard, one at a time. As the tortillas get almost crispy, drop them into the red Chile sauce to soften as you fry the next corn tortilla. Lift the corn tortilla out of the sauce with a spatula, shake off the excess, and lay the tortilla on a plate. Drop the next fried tortilla in the red Chile sauce. Continue this process until you have a half dozen or so fried and sauced corn tortillas. Take the tortillas to a space where your baking dish, cheese and meat are. Spread a bit of red Chile sauce from your pot on the bottom of your baking dish. Lay out one sauced corn tortilla in your dish with half the tortilla on the edge of the baking dish. Spoon some cheese across the middle of the tortilla then some meat. 2-3 slices of black olives before the cheese are a nice addition here. Starting with the tortilla edge on the side of the baking dish, roll the tortilla over the filling and roll again so the last edge is facing the bottom of the dish. This order puts your olives on top, then cheese on top of the meat. Start the next one by laying 1/3 the tortilla against the previous one, fill and roll. Continue filling and rolling and frying and saucing until your ingredients are gone. Make sure you have extra red Chile sauce. Pour that over the top, covering all the enchiladas. Add shredded cheese on top. Bake 20-30 minutes or until bubbly and done. Top with chopped cilantro and your choice of Queso Fresco, Cotija, Oaxaca or Manchego cheese, scratch the sour cream. Serve with Mexican rice, refried beans and more cheese and red Chile sauce for the rice and beans. Consider yourself an honorary Mexican. Make green enchiladas the same way, using green enchilada sauce instead of red Chile sauce.
