Love the channel Jim. Try leaving the skin attached to the end of the tail. I see so many people cut the fillet free from the fish with the skin still on. Don’t remove it. I have found flipping the fillet over while it’s still attached at the very end gives you something to hold onto. While holding the tail you can even lift it up a bit and then easily remove the fillet from the skin. Try holding your knife blade angled down towards the board about 30 or 40°. holding the tail it is so easy to skin. Try it next time. You’ll never go back to your previous method. Hey everyone has their own way. But do what works best for you. Cheers
Nice technique! Like it! But oh my god ..... you are cutting towards your left hand all the time (especially with skinning)! How do you manage not to hurt yourself?! Skinning is very easygoing when you hold the skin at the tail and cut away from you. Thereby the skin is under tension and you don’t risk cutting yourself.

You know i dont think ive ever had a type of fish i didn’t like. Ive had Largemouth out of a shallow, warm weedy lake that didnt blow my mind though but with a marinase theyd be fine
Pike are a very under appreciated fish, I love eating them. my Dad like to poach them before baking in the oven, or roasting in foil over the fire, small bones disappeared. Great tutorial on fileting. Hand seems to be healing just fine. thanks forthe great video.

My wife runs backcoubtry camping and canoeing workshops geared towards women www.paddlelikeagirl.com i also know that if yiu start guiding or a guiding clmpanh, often you end up not actually doing trips and just stay back and run a business. So, with what i do now i potentially get to get out more.

You are very knowledgeable about the wilderness and I learned a few things watching your videos. However I was surprised to see how you cut your fish. If I may give you a piece of advice: always cut away from yourself. Never towards you because that’s how you get injured. Thank you for your great content! 🛶
Thanks a lot, ya, never cut myself cleaning fish. Its because my hands are either a ways under the blade and/or there is a lot of fish between my hand and the knife. Its not really practicle to remove a fillet withiut holding the fish down with your other hand.
Nice! I was just in Temagami with my wife and 2 boys. Pickerel and pickerel fishing was off the charts. Bass was slower. Last year it was exact opposite. Man we ate well! Still working on my filet skills! Good to see you are progressing after your injury! Godspeed!

Just had me a nice bass catch and cook in Temagami on the weekend. Amazing how interconnected it is in there, endless canoe routes and every lake is beautiful. We got into Donald Lake from Matamagasi. The water clarity in Donald is unreal.
Indeed, I know that area well as I worked at Scadding and lived on Kukagami while working there and been on some canoe trips in the area. Its the best.
Haha, it was okay. We were clearing trees that had grown since the 80s ontop of a clean tailings pile for a reprocessing project....i was cutting, hauling and multching for three weeks through the heart of blackfly season and there was only two if us on the job.
I'll have to try the 5-cut pike method plus boiling and picking the spine. I'm a fan of the 2-cut extra-bony method myself so far. But it would be nice to just bite into a big chunk of fish instead of eating carefully with my fingers. But I'll probably have to wait til winter if not spring to find a pike in Alberta that doesn't taste like blue-green algae...I'll just focus on walleye for now.
As far as Pike go, my gf is working in Alaska at present and when they go fishing I don't think they even use bait & the pike will just hit the naked hook. From a cooking perspective, I too cook fish skin on/skin down - it helps to protect the fish flesh itself and I cook it probably 75-80% skin side down. Flip it and the skin will come right off if its cooked properly. W/skin always start it is a cold skillet so it won't curl up, if that is your choice of cooking apparatus.
We used to cook perch at the lake... it was awesome... pound of butter and skinned perch with the dorsal fin off... after cooking press the ribs together and peel off the meat... as you say de-lish...
when skinning, its useful to get it started then slice a couple holes through the skin so there is something to hook your finger through. dont know if it works with pike though, id love to catch one.
For the back - if you go ahead and cut down the piece along either side of the spine with the skin on still, and then run your fingers into those cuts to separate everything into three chunks, you can then skin it all at once and discard the center cut.
We live in SC and can't buy Fish Crisp here so I had a friend bring me down some last year. My wife and I used it last night on some salt water snapper and trigger fish and we loved it. We will get some more.
Ya its great and distributed nationally to outdoors stores, country stores and grocery stores across canada but not to the states. I guess there’s enought other similar prodicts there. Drake’s is one that’s used in MI and WI for example. We love Old Bay here too for sure. The one i use here is the Fish Crisp brand beer batter mix where you add beer to the powder and dunk the fillets. The type of Fish Crisp i usually use is the Seasoned Coating Mix that goes on dry. Basically a shake and pan fry. Big fan if thr Cajun and the Roasted Garlic and Butter variaties of Fish Crisp.

Yes! Everyone, eat more pike! There is nothing wrong with them, they taste fine, but I see so many people (especially you ontarians) who call them snot rockets and throw them back. Then after years of hammering trout, and throwing back those monsters (who eat trout like non stop), they complain lakes are no good, because it's just pike.

We live in SC and can't buy Fish Crisp here so I had a friend bring me down some last year. My wife and I used it last night on some salt water snapper and trigger fish and we loved it. We will get some more.
Ya its great and distributed nationally to outdoors stores, country stores and grocery stores across canada but not to the states. I guess there’s enought other similar prodicts there. Drake’s is one that’s used in MI and WI for example. We love Old Bay here too for sure. The one i use here is the Fish Crisp brand beer batter mix where you add beer to the powder and dunk the fillets. The type of Fish Crisp i usually use is the Seasoned Coating Mix that goes on dry. Basically a shake and pan fry. Big fan if thr Cajun and the Roasted Garlic and Butter variaties of Fish Crisp.

Lovin your vids. Its funny how so many people think of pike as a "junk fish" just because of bones. I will take pike over just about any fresh water fish any day. Hopefully a couple weeks I'll have pike in cast iron pan over open fire. I just wish it wasn't such a long drive coming from Windsor.
This is true and i know a few people who swear Pike is their favourite fish of all.

Yes! Everyone, eat more pike! There is nothing wrong with them, they taste fine, but I see so many people (especially you ontarians) who call them snot rockets and throw them back. Then after years of hammering trout, and throwing back those monsters (who eat trout like non stop), they complain lakes are no good, because it's just pike.
