A touch of sugar in tomato based stews, sauces and soups. Substituting apple sauce and other puréed fruits for half the oil required in breads or cakes. Softening butter. Hot water in a glass bowl, empty the water then turn upside down over your cold stick of butter. Works excellent in the winter as well, but maybe use a tea towel to help insulate a little. Brining meats. 1:1:1 ratio of sugar, salt and water usually(?). Marinating onions for better onion rings. Pumpkin in curry sauces that are overcooked and help thicken the sauce naturally. I ❤ cooking, but I don’t want this comment to go on forever.
Hey my dear, I love your videos and I really want to share with you what helps me in the kitchen. I haven’t watched your latest video yet, so I apologize if any of this is redundant. For cleaning, I use a cleaning stone. You can use it for everything, and it lasts for years. For limescale in the kettle, just use vinegar essence and water. Boil it and you're done. When cooking, I try to use as few pre-made products as possible. For frying, I use coconut oil or sesame oil, and almost everything is deglazed with homemade broth (just save the water from the last vegetables you cooked) or coconut milk. You can also make coconut milk yourself from water and coconut paste. The best trick in summer is to make iced tea and ice cream yourself. For iced tea, just brew tea the day before and let it cool. For ice cream, either make sorbet from frozen fruit in a blender, or make nice cream from bananas. Freeze the bananas, blend them with your favorite ingredient (e.g., cocoa powder or cookie pieces), and enjoy. When cutting on boards, place a damp towel underneath and nothing will slip. My top tip is if you are cracking an egg and get some shell in the mix, use the egg shell you have in your hand to scoop it out. They attract each other and it comes out so easily. I wish I had known that one a lot sooner and saved me a lot of time chasing it around with a teaspoon. This video is just so relaxing as always Diane, thank you ❤❤
I can not say this often enough. Diane is a master at her craft, from her sets (which are impeccable) to her sounds, level of volume when using voice, and variety of her videos. 2 hacks I was taught as a child, when slicing onions breathe in and out through your mouth, it stops your eyes from watering. To get juice out of citrus fruits stick a cocktail stick or a straw into the bottom of the fruits and squeeze, voila, lovely juice and you don't have to worry about the pips. The onion tip is such a boon, I'm extremely sensitive to the onions for some reason, I always have to get someone else to cut them for me because it gets to the point where I literally cannot see
@autumnsprite I'm sensitive enough that if I come home I can tell within 2 seconds if someone cut onions at all that day. My eyes don't water, but burn. I've tried just about every eye drop on the market. My only relief I get is a wet wash cloth or going outside. Needless to say, we don't use onions in my house very often.

Let me leave this age I am in. When we look at a timeless painting from long ago we often wonder what it would have been like to live in that age. Diane, you make those paintings come alive in our time. The paintings pull at us and beckon us to simpler time. Yes the work was hard but the satisfaction of the effort is like the last brush stroke on a canvass. The Artist looks back at His or Her creation and smiles. When baking a box mix of cake, add a package of pudding mix and an extra egg to make it denser and more moist. When boiling pasta, add a tbsp of olive oil to the boiling water before the pasta. Helps mine not to stick to the pot. I also use many different shapes of medium sized pasta to keep my 3 year old interested in eating.

I’m so glad I decided to watch this before bed Usually, cooking stresses me out because it’s another one of those things you have to do every single day, and it can become tedious when you’re short on time But being able to just watch someone be slow and methodical with it, really enjoying it, and sharing it with others, is something special. It’s good to be able to take a break from the hectic race of normal life. You, ma’am, are a breath of fresh air
I put avocado pits directly into the soil of a flower pot (preferelly the pot of another plant when there's still place in the pot, so one doesn't forget to water it). Takes 2-3 months, but it grows as well as in water glasses.

To quickly peel garlic, I cut off the root, peel back the little tail of skin at the top, and roll them under a damp washcloth on top of the cutting board. It takes a little elbow grease, but it works in a few seconds, and works for multiple cloves in one go, up to about 7-10 depending how big your hands are. I've been doing that for 25 years, and it always works for me. Love your videos!
Thank you, this was informative _and_ chill. You can also put lemons and limes in a microwave for 10-20 seconds to soften them up and get more juice out. I usually do a combination of microwave and rolling. Smashing garlic is a lot easier if you use a Chinese knife (one of the big, rectangular knives). You can cleave, chop, smash, scoop using the blade, and use the handle as a pestle. They are my favourite knives since they're so versatile. I think everyone in Southern California (and probably the southwestern US) cuts avocados like that. It's a well known method here, but then California produces more avocados than any other US state and Mexico is the largest producer of avocados in the world.
What I love about this cooking video is that a combines the soothing sounds of food preparation with the visual artistry of cooking, creating a relaxing and immersive experience. It offers a unique way to unwind, engage the senses, and appreciate the culinary process. A tip I have learned and use would be to put your olive oil, or whatever oil you’re using, into a spray container, whether it’s glass or plastic, as it helps to disperse the olive oil evenly while controlling the amount of oil that is used.
Honestly I’ve always cut the avocado like that, I didn’t know that there were other forms to do so, however I’m glad that the ones that didn’t know this way now do. This is both helpful and relaxing :)
I always squeeze lemon on my freshly cut avocado to stop oxidation. Or any citrus will work. ❤ I eat them plain with a little salt and pepper I love them so much. ❤ California girl.

I’ve had the best success sprouting avocados another way. Line a plastic sandwich bag wet paper towel, tuck the avocado pit in, and forget about it for a few weeks. Don’t wash the pit. Don’t seal the bag. Don’t worry if the paper towel gets a little brown. Just make sure the paper doesn’t dry out. After several weeks, you’ll have a stem and root. Plant in potting soil.
I love cooking too! But it really doesn’t love me! I seem to possess this unique talent for ruining even the simplest of recipes! 😂 And one of my favorite kitchen hacks is to press the number 2 on the microwave and hope for the best!! 😭 But in all seriousness, this is absolutely lovely Diane. Your cooking short films are filled with some of my favorite visual and auditory triggers. I have gone back to your “The Cook and the Kitchen Hand” countless times, and I regularly listen to your kitchen ambiance film to help me sleep. There is something about these sights and sounds of the kitchen that seem to speak to the youngest parts of me. They bring me so much comfort and solace and nurturing, particularly when I am really struggling. These sounds are glorious all by themselves. Merci encore, Diane !❤ another beautiful video! My favourite hack for cutting onions is to simply use a very sharp knife. A dull knife crushes the cell structures of the onion, which releases more of the compounds that will cause your eyes to water. While a very sharp knife slices cleanly through, damaging fewer of those cells , which means fewer tears for the cook. It works really well for me. ❤ 🇨🇦

You can also put lemons and limes in a microwave for 10-20 seconds to soften them up and get more juice out. I usually do a combination of microwave and rolling.
Smashing garlic is a lot easier if you use a Chinese knife (one of the big, rectangular knives). You can cleave, chop, smash, scoop using the blade, and use the handle as a pestle. They are my favourite knives since they're so versatile.
I think everyone in Southern California (and probably the southwestern US) cuts avocados like that. It's a well known method here, but then California produces more avocados than any other US state and Mexico is the largest producer of avocados in the world.

Honestly I’ve always cut the avocado like that, I didn’t know that there were other forms to do so, however I’m glad that the ones that didn’t know this way now do. This is both helpful and relaxing :)
I always squeeze lemon on my freshly cut avocado to stop oxidation. Or any citrus will work. ❤ I eat them plain with a little salt and pepper I love them so much. ❤ California girl.

I’ve had the best success sprouting avocados another way. Line a plastic sandwich bag wet paper towel, tuck the avocado pit in, and forget about it for a few weeks. Don’t wash the pit. Don’t seal the bag. Don’t worry if the paper towel gets a little brown. Just make sure the paper doesn’t dry out. After several weeks, you’ll have a stem and root. Plant in potting soil.

I have gone back to your “The Cook and the Kitchen Hand” countless times, and I regularly listen to your kitchen ambiance film to help me sleep. There is something about these sights and sounds of the kitchen that seem to speak to the youngest parts of me. They bring me so much comfort and solace and nurturing, particularly when I am really struggling. These sounds are glorious all by themselves. Merci encore, Diane !❤ another beautiful video! My favourite hack for cutting onions is to simply use a very sharp knife. A dull knife crushes the cell structures of the onion, which releases more of the compounds that will cause your eyes to water. While a very sharp knife slices cleanly through, damaging fewer of those cells , which means fewer tears for the cook. It works really well for me.
