Keto Hard Shell Tacos and Tortilla Chips!

  • Last week, I released a video for keto/carnivore tortillas that had only .5g of total carbs each. This week, I show you 3 methods for creating hard shell tacos and tortilla chips.
    🎥Tortilla video: • Carnivore / Keto Torti...
    👉Dehydrator method for taco shells: 135F (57C) for 90 minutes
    👉Dehydrator method for tortilla chips: 135F (57C) for 4-6 hours
    👉Air fryer method for taco shells: 360F (180C) for 2-2.5 minutes per side
    👉Shallow oil frying method for taco shells: heat oil to 325F-350F (160C-170C) and fry shells on each side for 2 minutes, then fry the bottom of the shell for an additional 30 seconds.

    PLEASE READ: As I stated in the video, I feel that these taco shell molds are obscenely over-priced. They are, however, the best tool I've found for this job. If anyone finds them (or a comparable item) cheaper, please let me know and I will update this comment and the description with the information.

      You can put the tortilla on parchment paper and when it starts to hold it's shape, bend the paper with the tortilla on top and put it between two empty cups, or over one cup/glass. It works well when making them in the microwave oven.🌻

      @@CaleanWsh she probably mean when taco is firm enough to shape, fold parchment paper towards inside, taco outside, something like a cup, empty paper towel roll etc, holding taco shape while it air frys🤷🏽‍♀️

    Great video. I really love how you keep it real, but at the same time, there's great production value. You get right to the point and there is not one bit of rambling. You take the time to edit it and educate us. Easily my favorite keto coach. And, I'm sure I'm not the only one, but I'd love to see you do a book. You have great ideas and I'd be more than happy to "shell" 😉 out some dough on a book you put out.

    Very nice. If one doesn't have a dehydrator, it's also ok to make crackers and hard tortillas in the microwave. A nice one is same amount of almond flour and shredded mozzarella cheese. A little water and mix well in food processor. Spices to taste. Spread thin on a silicone mat, or parchment paper, put into microwave oven for about 4 min (my microwave oven is only 700W). They come out a little soft, but once cold they're hard. If you break them, you have crackers. If not, a hard tortilla shell. It's fast and easy. Duff makes them also with parmesan and with xantham gum.

    I wish you could make your hard taco shells and sell them in the store I would surely buy them. You're so good at knowing the little things chemical and sugars and all that and I trust your judgment I wish you would really start a low-carb keto line yourself.

    I am doubtful that I am ever doing 90 minutes in the dehydrator 🥴. But the shallow fried one looked especially terrific!
    I like the shaper! Plus I want one of those tortilla warmers :) You always have the best kitchen gizmos.

      Like I said, the price on those shapers is out of line (in my opinion). But it's the only product I've found that works that well.

    Looks like I’ll have to dig up my trusty old dehydrator. The hubby stored it somewhere in the garage, which is like the walk-in equivalent to my purse: you know what you’re looking for is in there, but chances are you’ll have to empty the entire thing to find that one item 🤨

    Oh man. Funny thing about those taco molds...Already had those exact ones sitting in my Amazon shopping cart for a couple of weeks on an order I was building Having selected those as “the best” of the ones that I had investigated out of the many options available. Naturally I see this video this morning and that you selected the exact same ones & my instant thought was Amazon is going to sell a lot of these things now! So I quickly reviewed my cart and pulled the trigger on my order so I don’t get caught in a backlog or back order out of stock situation!😂 I guess even without having used them I feel validated that I picked the right tool for the job! 👍😎

    Martina (ketodietapp) hung her tortillas from the rack of the oven to form taco shells. You could try using the racks which come with the airfryer and spread the tortilla over2 or 3 rungs. Just a thought.

    I hang my tortilla over 2 rungs in my toaster oven or reg oven and leave on to my preferred crunch. No oil involved. Easy

    I tried making hard taco shells using your recipe and the molds, and these are quite amazing taco shells actually. I wouldn't be able to tell the difference between these and taco bell shells, from what I remember of them anyway. I usually don't comment but these are a winner. It doesn't feel like a compromise food in any way. It feels like a carb heavy shell.

      Have you tried the Quest chips yet? OMG! DELICIOUS! They are by the protein shakes in the pharmacy section at Walmart. 2.50 a bag, but worth every penny! Chilli lime is my fav. Not for everyday, but sometimes you just want a normal chip, and boy! They do it!

    Steve, let me staring by giving you a big THANK YOU!!! I made the recipe and came out good, I also did try to make only 3 tortillas out of the batch, I saw the tortilla were too thick for my taste and I tried half of the dough, it happened that they came out great! So, for me, next time I’ll make 6 tortillas out of the batch. Thank you again. Plz, 🙏🏻 keep on making these Keto recipes

      We actually keep our dehydrator in our basement. It's out of the way, doesn't take up any needed room and is in a relatively warm place (during the winter)!

      We're in an apartment and we have the same appliance dilemma, I hear ya😩. We have a small closet in our "den/office" room that we put our appliances in. I think family dollar had these tiered-cubby shelves I guess you'd call them, but not the box kind. We put most of our appliances on that. We need another one now 😂

    I always find your videos and cooking techniques really interesting and appreciate that you are considerate enough to remember that not everyone has a kitchen full of expensive gadgets! But these seem like they need a lot of effort to get a crispy chip out of something that started out as a crispy chip??? I guess this is for die-hard tortilla chip lovers who don't care for pork rinds as a replacement? XD
    Ah well, still enjoyed the video. I'll just keep calm and pork-rind on. ;^)

    Would you consider doing a video on a "special keto cooking ingredients" that folks starting out might not know too much about? I've watched a bunch of your videos and am intrigued by the xanthan gum, different sweeteners, different unusual flours, citric acid, pork rinds for flour, etc., I would like to figure out what I should plan to keep on hand as I dive (back) into more serious keto.     Paneer: It's just cottage cheese curd and you can make it yourself very easily. Lots of UA-cam videos on how to make it.

      Beware of the moisture content of homemade paneer. You want a consistency that starts to clear the bowl of the food processor. Also, the more moist your dough is, the longer it will need to sit before you can successfully press a tortilla that holds together.

      @@SeriousKeto Great point, especially given that, as you have emphasized, this particular recipe is very sensitive to getting the ingredient order and timing right. I live on the west side of Toronto where there's a huge south Asian community and yet I can't find paneer in the supermarkets I frequent. I figure that most make it themselves.

      I tried making paneer at home and ran into issues because it was a much high moisture content like Steve said.

      @@dctravis In some YT videos the maker has said not to press too hard because she likes it soft. Other makers put a large pot full of water on top to weigh it down. That leaves me to wonder whether every type of paneer you could find in the store would be consistent in their moisture content.

      @@jstreutker I had also had issues trying to make a previous cracker recipe using paneer I had found at a local indian mart that was frozen. Since I really wanna try tortilla 2.0, I'm going to have to venture to Costco closer to chicago since they have a larger Indian population and might sell paneer there...

      I don't, mostly because if I'm dehydrating anything, I'm doing a much larger amount than the Ninja tray can accommodate.

    If you are frying the tortilla, you do not need anything but your tongs and a fork to form into a shell.

    Hi Steve great video. Looks like I would like the pan fried better also but wish the air fryer would have been better just for ease. I have a few questions...what oil did you fry it in? Also did you pan fry chips also?

      Avocado oil. I tried chips in the pan and air fryer. They both overcooked by the time they were crisp.

    I invested in the dehydrator and the obscene high priced taco shaper. Looking forward to making it all. Question:
    After dehydrating the tortilla chips I got the moisture packets if I put them in a plastic bag with the moisture packet, do I then put them in the refrigerator or freezer or just leave them out for semi-long term storage long term meaning a week to two weeks?

      The shelf life on the chips is pretty long, especially with a desiccant packet. They'll go stale before they go bad.

      @@SeriousKeto should be super easy to adapt. traditional recipe is made with potatoes seasoned with garlic, salt and pepper (cumin if you like it). stuff the tortillas with the mash and fry. Salsa is Roma tomatoes, garlic, onion, Serrano chilis, and salt. top the tacos with thin sliced cabbage, Mexican cheese (like queso fresco) and salsa. I would suggest trying to find the chayotes with the spines if possible in your area, they taste better!

    Here's a suggestion I saw recently on Tik Tok...Take the tortilla and slide it in a glass and microwave it and it supposedly takes the curved shape of the glass. By the way...I don't know why advertisers don't realize that even though they can swamp feeds with their ads they have no control over viewers turning the sound off which is what i usually do.

      I believe I stated early in the video that they overcook in oil if you cook them until they are crunch. The dehydrator is the way to go for the chips.

    Has anyone tried dehydrating AND THEN frying for a few seconds? I haven’t, but was wondering if you would get the best of both worlds. Crispness from the dehydrator, yet the nice fried taste without getting too dark. 🤷‍♂️

    I'm guessing the chicken based tortilla/taco wouldn't crisp like the pork rinds one? 🤔. Don't think pork rinds agree with me unfortunately 🤷 Mind you, I think I'd tolerate feeling unwell for that crunch! 😏

      My gut tells me that the chicken taco shells would be too moist to fry, but it may work in a dehydrator.

    Thank you for your recipes! I found what I believe to be the best “soft” corn tortilla recipe, and I wanted to share. Not sure if you have done this one yet, I’ve watched a lot of your videos and haven’t seen it yet.

    The only thing I changed in this recipe is omitting the garlic and cumin. I think a tortilla tastes better as a blank canvas. Just my opinion. I used your method of making a dough log in parchment paper for slicing and portioning, I pressed in a tortilla press and then rolled them thin between two sheets of parchment paper. I live in Arizona and my ancestors hail from here and from Mexico... I like my Mexican food lol! As a native, when I say this is the closest soft corn tortilla recipe to the real thing, trust me, it’s amazing! Very close taste wise as well as texture. I hope you will enjoy it also!
